Chicken Curry with coconut milk (Mangalorean special) | Chicken Roce Curry | You and I Can Cook

  • A mildly spiced, simple yet delicious chicken roce curry, the Mangalorean way.
    Ingredients
    1.2 kg Chicken, cut into medium size pieces (apply salt and turmeric pwd, and let it marinate for 30 mins)
    Grind and fry the ground masala paste ( or you can first roast the ingredients and then grind)
    4 short dry chillies
    5 kashmiri chillies ( for lighter colour gravy add 3 chillies)
    2 tbsp coriander
    1.5 tsp jeera (cumin)
    1/4 tsp peppercorns
    1 tsp mustard
    5 cloves
    1 inch cinnamon
    3 cloves of garlic
    1 big onion, sliced (for grinding)
    1/2 tsp turmeric pwd
    2 tbsp freshly grated coconut
    1 gooseberry size ball of tamarind
    grind all the above to a thick fine paste adding little water while grinding.
    Reserve the water obtained after rinsing the mixer jar.
    Other Ingredients:
    Oil for frying
    1 medium onion (for tempering)
    1 cup thick coconut milk
    Salt
    Method:
    marinate the chicken with salt and turmeric pwd and set aside for 30 mins
    Dry roast the ingredients for grinding except tamarind and coconut (or) grind all the ingredients first to a fine paste without roasting. You will be frying the ground masala well later.
    Add 2 tbsp oil to a hot utensil
    Add 1 sliced onion and saute till the onion turns golden
    Now add the ground masala paste and fry well for 5 mins. (if you roasted the ingredients first then no need to fry the ground paste)
    Add the reserved water from the blender, adjust the consistency of the gravy
    When gravy starts to bubble add the marinated chicken, give it a mix.
    Cover and cook on medium heat for 30 mins or till the chicken is cooked.
    Reduce the flame now completely and add 1 cup of coconut milk. Stir well to avoid the coconut milk from breaking.
    Adjust the salt and consistency of the gravy. if required you can add little tamarind water to balance the taste.
    Simmer for 2 mins and turn off the flame.
    Serve hot with stringhoppers (sheviyo/idiyappam), sanna, appam or rice, chapathi, roti, neer dosa etc
