My dough is too crumbly and if I add water it is wet on the outside but breaks apart instantly, I add the water in slowly and knead it for a long time but it does not come as stretchy as it is in the video, any advice?

Dont use potato starch, i made noodles with fresh boiled potatoes add cornstrach and ap flour to it and then knead. Potatoes should be grated and mashed. :) edit the noodles turned out outstanding
@@marypazsioco2904 no, you can not substitute corn starch. It won’t work. Sweet potato starch can be substituted. There’s another cold noodles dish called mung bean jelly noodles.
Kinda sucks that this recipe doesn’t mention that if you don’t use a certain kind of starch, the dough will never stick together. I got my hopes up and wasted my money for nothing

Based on what I've read on Wikipedia, both would probably work.
Corn starch or tapioca starch won’t work with this recipe. Try mung bean/green bean starch to make a similar dish called liang fen or jelly noodles.
Tapioca starch will work... Cuz I do it all the time.. But the water must be boiling hot..just keep stirring til you can handle the heat..

It probably lacks water. Probably keep adding few drops of water and continue kneading until you get it together

You can cook it for longer time for a softer texture. But in general, it is chewy.

I don't think so because rice flour doesn't have gluten and can't rise with yeast
