    Spring has given us a surplus of eggs. Our friend's neighbor's hens are laying more than they can eat. I read that the ancient Romans made stuffed eggs using the yolks of boiled eggs mixed with salt, and pepper. This dish is becoming increasingly popular as are all things ancient Roman. They were amazing! I had 5 eggs that day and could hardly move after.

      Our chickens are giving us 3-3 1/2 dozen a day so we’ve been giving them to our neighbors as well.

      It's called deviled eggs (usually with some mustard and I think the Romans used mustard seeds)

      About testing the freshness of eggs by floating them in water, if they float, they are old, but not necessarily bad enough to throw out. Old eggs make good hard-boiled eggs because it is generally easier to peel the shell off of them, as compared to new eggs.

      @@charlottekey8856 But there's no spiciness to these, where deviled eggs have a bit of zing to them -- I make mine with diced onions, salt, pepper, Worcestershire sauce, vinegar, mayo, and paprika on top. A lot of people down south here like relish, but... ick, no.

      These days and age, eating dinner is probably in front of TV, or using cellphones, or in front of computer games, instead of taking time to relax and enjoy family’s company.

      My grandmother always had a wooden chair in her kitchen. She would sit to do prep work, or to take the load off her feet. That was back when kitchens were distinctly separate rooms from the rest of the house, so no dinette nearby to sit at. 100-40 years ago, now. Mom had one of the pullout step-ladder chairs in her kitchen, very popular in mid-1900’s.

    Back in the day when neighbors knew everyone.Helped you out when you needed help.Not saying people all aren’t bad,but this day in age people keep to them selves, afraid you may say something,,, Love how nothing was rushed, now days you better hurry, or else. LoL. Love this channel.❤️

    We enjoy listening in to normal every day chit chat, the volume is a bit to low but it makes it more real, not a scripted off putting play.

      Let's not romanticize this. This recreation shows us the best, not the worst. The majority of people during this time were living in poverty in shit filled streets, struggling to even get one meal. While being surrounded by millions of other empoverished people in coal smog filled cities, thriving with deadly diseases with no cure. And even that one meal they struggled ould have usually been rotten and spoiled due to lack of refrigeration. If you were lucky enough to have a home you would walk home from your job at a factory or mill where you worked on starvation wages in dangerous conditions with no workers rights, and would have probably been abused or even sexually assaulted by your Forman. When you walked the streets filled with feces and smog, with the empoverished begging at your feet for even a crumb of bread, you would walk home to sit at your dinner table of rotten food and dirty water, and milk filled with lead; in a room of arsenic green wallpaper as the gaslights slowly suffocated you. You would go to bed cold and starving, with a husband who was just as if not more abusive than your Forman, and keep in mind at this time concent was hardly even considered. You as a woman would be property, as well as your children who were also working in EXTREEMLY unsafe conditions, whom you would almost never see. As a historian, I love the aesthetics and simplicity of this time; but I also promise you this: you WERE NOT born in the wrong generation, you would hardly survive a week in this time. Seriously, most people died at 35 if they didn't die at birth (3/5 children did). Be grateful for the time you live in, and support the historical aesthetics, not the values and reality.

    Oh how I loved watching how food was cooked over The range fire, I do remember after the war
    And when as a child probably the 1950's my own
    Grandmother had a Victorian Casr Iron Range in the kitchen area of house, i remember the hanging
    Kettles and pots an the oven part. I remember the vendor surround over the red-tiled floor
    An my cousin an myself as children would sit on floor an use fork to bread slices to toast
    Ahhh happy memories, oh to mention i loved watching the man compile his ingredients
    Taking his time to cut the steak an the onions plus adding cider to cook the meat pie
    Oh soon delicious, thanks for the great historic scene of the bygone age really enjoyed.👏

    Maybe not historically accurate but a better filling for the eggs: yolks, salt, pepper, finely diced onion, Worcestershire sauce, vinegar, and mayo (start off with just a little on the mayo and add gradually -- you can always add more but can't take it away if you add too much). Top with paprika.

      This is the way I make my "deviled eggs" too, but one must be careful with adding the apple cider vinegar....just a titch at a time because it's easy to get too much.

    Man wouldn’t it be nice if we can travel back time just for one day to visit people living in those eras! To see their living styles and how they do things. Maybe bring the future items to show them like cellphones, watch, etc.

    Life in 1820 would necessarily be slow-paced--largely, because, well, there's less to DO by way of diversion. Most relations and friends lived close by. Most people lived their ENTIRE lives within 75 miles of where they were born 😲

      There was plenty to do. Tending the garden, which everybody had to do if one wanted to eat, was an everyday job. Washing was every Monday and took all day. There was feeding the animals, milking, gathering eggs, getting water from the spring, chopping wood, building fires at 4 am, and hunting, and gathering wild onions and mushrooms, and canning and storing harvested produce for the winter, besides cooking and cleaning. There was sewing if you wanted clothing and quilting if you wanted blankets. There was cutting hay and storing it in the barn. Most people didn't have time for diversion, unless it was a church social, if there was a church to go to, or some other similar activity. Maybe a barn raising or a quilting bee.

      @@Mehron74 Life similar to that way of living without slavery of course, just simpler, closer, I crave the intimacy of those days. Living off the land. Just so you know not everyone had slaves back then, Europe didn't, so, if you were black back then, living in Europe, you'd of most likely had a beautiful life, I I'm not sure why you felt the need to interject your race and situation into my comment but good luck with that, Today this s today, stop living in the past or you will remain there forever.

      @@ApartmentKing66: that’s funny! I suspect all that food additives, GMO products, and artificial colorants are affecting our immune system, which in turn goes and attack our thyroid.
      This is what Hashimoto’s Thyroidism is all about. However, even with hypothyroidism we can loose weight.

    2:50 covering the pot w embers. i love cooking in a campfire! 😁🔥 1 thg i like doing is wrapping potatoes in foil, covering them w embers, & forgetting about them, until i smell them 😎 i never thought about doing that w a dutch oven! nice 😉

    I enjoy deviled eggs myself, I just add mustard and mayo to the yolks. what I absolutely LOVE are pickled beet eggs (my mother was from southeastern Pennsylvania). Six hard boiled eggs, shelled, add sugar and white vinegar to taste to the canned beets and their juice, add the peeled hard boiled eggs and the hardest part is waiting 24 hours for them to get nice and red! I usually make them around Easter. Yummy!

      Well my grandpa loved cooking , and he cooked on weekends, and invited friends, plus they had 8 children! My dad could also cook, but did not like doing it, he taught my mother all the dishes he liked. 😁

    Makes me really thankful that I have a stove, microwave, rice cooker, big industrial mixer, toaster, Nesco roaster and pressure cooker! Also washer and dryer and dishwasher for when I need and of course, natural gas heating. electric lights and air conditioner.

    If the egg floats it's gone bad is a great tip. I have raised chickens, it takes quite a while for that to happen. Always good to be safe.

    I like the style in which this was done! Food tasted better cooked on a slow flame.back in those days stuff was all natural,better for you.I remember my first ice storme,it knocked old the electricy for a week.I cooked with a old wood stove the food was better.David back Menifee co.Kentucky. Like all of your videos!

      Me too - they had plenty of mushrooms growing for free! I would add mushrooms, definitely, and possibly carrots and/or parsnips. This looks interesting to try.

    how LUCKY we are with electric power! i can see supper being a nearly all day affair to make, back then! and that didn't count breakfast and lunch! Housewives were badasses back then, and probably extremely busy! LOL

    I always wanted to be a period actor growing up. But I realize that it may be somewhat unrealistic, as I am mixed and there aren't really many accounts of people who were like that back then. I just want to dress up in colonial clothing!!

    Here's a good tip for eggs, old ones are better for boiling because they separate from the shell more easily. ;) (the ones that stand on end but don't float) Loved this!

    Looks so tasty ! I like my deviled eggs with real mayo, diced sweet pickles, salt, pepper and a bit of pickle juice. Sprinkle stuffed eggs with paprika.

    My mom taught me to make Deviled eggs like this...cut hard cooked eggs in half, putting the yolks in a bowl and the whites on your serving plate, which has oval depressions so the eggs won’t slide. Mash the yolks...I use a “cold meat serving fork because of the wider spread on the tines...add mayonnaise, a smaller amount of yellow mustard, a little sweet pickle juice, a dash of apple cider vinegar (you don’t want it too soupy), salt and pepper to taste...I started adding well drained sweet relish when my seven children were small because they liked it like that, fill an icing decorating bag fitted with a large opening star tip, and fill the whites...sprinkle half with paprika, smoky or plain, and refrigerate until serving time. Some folks don’t care for paprika which is the reason we only sprinkle half...we try to make everyone happy. Deviled eggs are a favorite in our family. The amounts of condiments added to the yolks all depends on how many eggs you boil...you should always start out with a smaller amount and add more if needed. Remember, you can always add more but can’t take it out. If you cook the eggs in an instant pot and then put in an ice bath for 5 minutes, they will usually peel easier. I am a third generation Texan but my mother learned to cook from her French grandmothers and great-grandmothers who were all excellent cooks.

    There is a woman in Ireland, Margaret Gallagher who has cooked like this her whole life. I think she’s about 80 now. She’s quite famous. She’s never had electricity in her thatched cottage. I enjoyed this video very much!

      There were also people who were Jewish and people who were Muslim in the US at the time, as well as others who didn't believe in any particular religion. Pennsylvania and Rhode Island were particularly welcoming to non Christians.

    What amazes me is that one is not talking like a movie script with seasoned actors. Here you see real people probably talking like they did in the day. It’s haunting because they could be talking just about the same back then as we talk and act today. Granted the topic might be vastly different and or exactly the same.
