- It's Taku Tuesday! Today, Taku and Jocelyn venture out into the intertidal to harvest purple sea urchin and make a delicious gourmet udon in the van.

Damn Taku you sharing the Uni with the hispanic family really hit home. I remember as a kid being at the beach and seeing fishermen walk down with hella perch and taking the time to talk to my family and answer any questions we had about the type of fish or anything. And them happily answering any question. Really inspired me to start fishing. And you inspired me to start foraging. I could cry right now lmao
After all these years, I never realized that it meant "Just a splash." It all makes so much sense now.

100% agreed man! I have been guiding sea urchin forays lately in the Bay Area and on the last uni foraging tour we found huge red sea urchin and huge purple sea urchin. While the size of the red sea urchin uni was impressive, the sweetness of the purple was unparalleled! Another great video bro!

You should bring your kayak and go north or south and check out the caves and insane tide pools or go on a tour with lost coast. If you haven’t seen the caves you gotta do it! I went out at the last low tide around the New Years. Best time of year. Use a spoon! Easiest way to harvest, especially if they are dug in. A typical kitchen spoon and sissors to open them. The bigger the better. I make uni butter and freeze it, 1:1 uni to butter, it lasts for ages, at least 6-9 months.

In New Zealand the sea urchin Kina (key-na) was harvested due to its richness in iron. Harvesting at this time of year is very common

Uni is great! Butter of the sea! It takes a few times to get used to the antiseptic taste but that umami finish is something special!

Here in SoCal I've never seen decent-sized purple or red urchins in shallow tide pools. Even at the King low tide 2 weeks ago, the ones along the shore were all too small. The biggest I've found have been in deep water, near the kelp forests in North LA County, only accessible by scuba or skin diving.
That looked so good. I have never had that but looking forward to it now :)

Taku, kakeudon is plain udon (no toppings except maybe chopped chives) whereas bukkake is udon with tons of toppings (as a bukkake, or cover).
