    I think this is one of the few times that the one month marinade has beaten out the shorter ones, normally it has a weird taste or texture as the meat fibers break down.

      Uncle Roger literally can't cook even basic food, he's proven it many times.

    For another experiment with Uncle Roger, you might try seasoning one steak with "5 spices" instead of the standard salt, black pepper and garlic powder. 5 spices can be found in most Chinese grocery stores and is commonly used as a dip after the meat is cooked (eg. Peking Duck).
    Another Chinese ingredient you coudl try is Hoisin sauce. It's quite sweet but not like Char Siu. More savoury a bit like A1 steak sauce. You should also have no trouble finding this in a Chinese grocery store.
    And since I'm listing off Chinese sauses, ther's Oyster Sauce too. And Fish Sauce. But I would be very careful about Fish Sauce as it uses fermented fish oils which can, let's just say, pose a challenge to your gastro-intestinal tract if you are not used to it as an ingredient.

    Perhaps a two week marinade would be the ideal length of time? Seems like that would put you right in between the last two as far as tenderness and flavor and still retain the beef aspect

      For those unfamiliar with the Portuguese, it translates to 'cheese bread' in English. In Spanish it is known as 'pan de queso' or 'pan de yuca' (Ecuador/Colombia) or "cuñapes' (Bolivia) or 'chipa' (Argentina/Paraguay). Salud!

      To be honest I felt like I saw some annoyance on his face when Uncle Roger made the "unemployment" joke. And to be honest, Uncle Roger, while funny at first, seems to repeat the same jokes over and over and over again. But he does have his fan base so he is good for boosting views I suppose.

    Char Siu sauce is literally "roast on stick", which is what we call BBQ. The sauce was originally made to cover up the taste of cheaper cuts of meat and to tenderize it. The reason you don't see it being used with beef all that much is because it's generally kind of a waste of the beefy flavour to mask it.
    Also the easiest way to make it is just honey + soysauce. There is so many variations, but it just needs to be sweet, slightly tart, and salty. The reason I mention the honey is because it might be what's causing the tenderization, and can also kind of pickle the meat. If you let it sit long enough and if it's thin enough it can almost candy the meat.

      Char Siu sauce is specifically use for premium pork cut to make what is called Char Siu pork. You can of course use it on cheaper cut. It has no tenderizering effect, for that Chinese chef use baking soda.
      Honey + Soya sauce would taste like Japanese Teriyaki sauce.
      I don't think you know what you're talking abt.

      If you want to try the marinaded pork he made, you can go to any Asian food corner store and buy tocino. Its pork belly so there’s some very lean parts and some very fatty parts, but all of it tastes amazing with the red sugary glaze on the outside

    I *LOVE* Char Siu! I make BBQ pork all the time. I've also tried the sauce on chicken and it's great for dipping fries, but I never tried it on steaks. I even happen to have some leftover sauce in my fridge right now. I guess I gotta get me a steak and try this for myself.

      Yeah char sui pork or chicken is amazing especially grilled since you get a nice char you just gotta constantly keep an eye on it definitely not one of them look away kinda cooks

    I love love to watch your videos. You have done a lot of different recipes but I have not seen you do meat Satay. Satay is a well loved dish, made with different meats on skewers marinated in spices, grilled over charcoal and dipped in peanut sauce. They are savory, sweet and oh so good (meat on sticks!). This is a favourite in Singapore, Malaysia and Indonesia. Please do one on this as I think you would do great!

    The next time you have Uncle Roger on, you should do the MSG+DSI/DSG experiment! I recently learned that snacks that use MSG sometimes also contain Disodium Inosinate and Disodium Guanylate (aka DSI/DSG or I+G) to enhance the effect of MSG by 20x-30x stronger (for example, Doritos, Pringles, KFC, Snyders Pretzel Pieces, Hidden Valley Ranch Dressing, etc).
    From what I’ve seen, some people buy a 50/50 premix of DSI and DSG (for example, by the brand Make It Meaty) and then make a custom mix of 97g MSG and 3g DSI/DSG to make an “enhanced MSG mix”.
    I was thinking the experiment could be this:
    1. Steak + Salt Pepper Garlic (control)
    2. Steak + SPG + MSG
    3. Steak + SPG + MSG + DSI/DSG
    Then maybe you could do a mini test with maybe another meat like chicken or maybe a potato based side dish or something, so we can see how it works with and without the MSG+DSI/DSG.
    I can even see the video title already “Food scientists say THIS makes MSG BETTER!”
    Anyways, I hope you give it a shot!

    Char siu is quite an exotic flavor. I'm Vietnamese so its called Xa Xiu. We use this marinate on pork and eat it with a soup wonton. Im happy to see Guga use this amazing sauce for Uncle Roger.

    I know uncle roger was joking about pork being haram and stuff but i want to inform you why it actually is halal in islam. Pigs are animals that eat their own poop. When they do that, a worm starts growing inside them and if eaten by humans, it can cause alot of health problems

      @@deathcrunch9020 It being dirty wasn't the reason given, though, but the resulting parasites and you can get parasites from many animals that aren't properly prepared. Cows chew their vomit and this "chewing of the cud" is one of the requirements of kosher laws but if you want to draw the line at the excrement, okay. Just don't conflate ancient laws with modern safety practices.
