How to Make Pickled Onions - Titli's Busy Kitchen

  • No cold meat sandwich or Ploughman's lunch is complete without the classic British pickled onion. Pickling your own onions is really easy!
    Ingredients
    Typical quantities
    750 g (26 oz) small pickling onions
    1 litre (2 pints) ready-spiced pickling vinegar
    4 tsp salt
    To make your own pickling vinegar
    1 litre vinegar
    150 g (5 oz) sugar
    ½ tsp coriander seeds
    ½ tsp mustard seeds
    ½ tsp black peppercorns
    Instructions
    Top and tail the onions and place them in a bowl. Cover with boiling water and leave for 10-15 minutes. The skins should now come off easily.
    Dry the onions and place in a bowl. Sprinkle with salt, cover and leave overnight.
    Drain the onions and wash in plenty of cold water to remove the salt.
    Drain and dry the onions.
    Bring the spiced vinegar to the boil. Place the onions in a clean, sterile, hot jar and pour in the vinegar, making sure that the onions are covered. Put on a clean, sterile lid and the job is done!
    To make your own pickling spice
    Simmer the vinegar, sugar and spices together gently for 30 minutes, then allow to cool for 10 minutes.
    Strain the vinegar to remove the spices and place in a clean pan.
    Titli's Tips
    Leave the onions to mature in a cool, preferably dark place for around 2 months before opening the jar. Once made, and providing the seal on the jar is airtight, the onions will stay fresh in an unopened jar for at least 2 years.

    If you let the vinegar cool down before adding to the onions you will get a much crunchier pickled onion. I tend to find that the hot or warm vinegar softens the onions.

    Oh, I am definitely making these. Do these need to be kept in the fridge once they're done, or just place in the fridge after having been opened? Thanks, Titli.

      Thaneii Store the unopened jars in a cool, preferably dark place. I don't put the jar in the fridge at all, even after opening. The onions will go slightly soft after a few weeks but to be honest by that time I'm down to the last one or two in the jar :-)

    When I was a kid ( 7yrs) it was my job to peel and salt all the pickles ( could you imagine a girl of 7 doing that today? They would be scared of damaging their manicure!) . My dad used to get and enormous sack of them every year.... I was ridiculed for smelling of onions for days...we did our own spiced vinegar too, buckets steaming pans and jars everywhere!.. but the resulting golden globes of deliciousness were all worth it .. My kids still ask me to do them every year . The jars of beetroot have already disappeared..... so looks like I will have to get me some onions! Really there isn't much to it, people should just have a go....Your recipes are so simple and always so well explained... Thanks Titli.

      grumpy poo When I was at university my mother would send me away in the autumn term with a large jar of homemade pickled onions. Happy memories. Problem is that they disappear all too quickly so this year I've made 4 large jars. I like to eat them by peeling the layers apart until I get to the delicious, slightly sweet core. Yum!

      Woman after my own heart, food to play with!.... I sometimes put a little sugar in the spiced vinegar too... People always leave my house with a full stomach .. Usually got something tasty cooking or in the fridge.. and none of it pre packed! Even my coal man used to deliver around 11.30 'cos he would get hot soup! hehehe.... Any more collaborations with Antipodean Steve?

    Thank you for sharing this recipe Titli.Your recipes make things seem easy and not so difficult to understand.I am in Scotland,and I have no time for fancy stuff that asked you to buy half a shop load of ingredients.Do you think you could do one for beetroot?

    Yeah I pickled onions last fall, I wish I knew your trick for getting the skins off at that time. I still have 2 pints in my downstairs pantry along with some pickled cauliflower. Don't ya just hate when you purchase commercially canned mixed pickles? They hardly put any tiny whole onions or cauliflower in them. Ploughman's lunch sounds good. Now I better learn how to make Irish soda bread for that. I wonder if you can show us how to make soda bread and do a classic plate up of ploughman's lunch. I have only seen that on a show about a restaurant/irish pub that was going through a renovation make over and it looks yummy.

    Good video. But I'm in the states. And that pickling vinigar that is ready made is no ware to be gotten. Can I get it shipped from there ??? Or where can I buy online

      You can make your own. To regular malt vinegar add a teaspoon or two of mustard seed, coriander seed and whole peppercorns. Add a couple of Bay leaves, and a good cup and a half of granulated sugar. Heat this up until the sugar is dissolved and leave to stand overnight. There's your pickling vinegar. Shallots are excellent for this or maybe scallions as well.

      i would assume a similar process, take the shell off boiled eggs, add heated vinegar until above the contents, seal n wait a few months

      +chris anders (chris anders seeds) lol thanks, well at least I had the proper vegetable. The variety I picked up in the supermarket last time were quite strong. It made for terrible pickled onions so thats why I wad wondering.

    the weird thing is in my area the only pearl onions they sell is for growing not cooking i guess their making us do the extra steps to save money lol thanks for the recipe my dad loves pickled onions and good recipes are hard to find

    Are "pickling onions" a special variety of onions or does it just mean they are smaller and white?

      sumamme They are just small onions as far as I know. There is s special very small variety called Silverskin onions but I've never seen them in the stores for pickling.

      I guess the Silverskins are what we call "Silberzwiebeln". Here in Germany you can get them sometimes at Farmers Markets but they are super expensive (about one Euro per 100 gramm). Have you ever tried pickling spring onions? You need small ones and they don't need boiling - just put them in a jar with boiling pickling vinegar. After one day in the fridge they are ready to eat and they are great with a Käsebrot mmmmmm

    While i do like making things from scratch I would find this a bit of a chore to be honest especially as pickled onions are so cheap in any case. By the time you’ve forked out for the spiced vinegar and the onions there’s probably not much saving.

    Boiling water makes them easy to peel .... as long as you don't mind compromising the quality
    I'd rather spend 10 minutes peeling them myself

    Just followed this to the letter with a pack of 750g of M******sons pickling onions and the "to be found nearby" (so obviously convenient) S*******s jar of spiced vinegar (what well strategically placed thumbs you have when covering your labels!). Yet the gesture (or the "Jester|"?) is highly appreciated.
    All went according to plan but I left it a bit late for Christmas so I hope these will be well matured in time for the end of January. Now "doing their stuff" in the cellar ... My only question is, how to stop those onions who insist on floating to the top of the jar and from being covered by the vinegar in order to keep them submerged? Air pockets or just uncooperative onions? Is it scientific or should I throw them out?

      mickypoo4622 Yes, they are a b****y nuisance. If you can pack them in tight they usually stay down but otherwise I invert the jars briefly every few days just to make sure the onions get a good dose of v*****r

      +Titlis Busy Kitchen I'm still eating these, I think there's about a third of them left. They usually make an appearance on Sunday nights for our weekly buffet at the local pub. I also added 4 very small red chillis from a jar of chillis in brine. Now they have a real "kick" to them as well!
