I just want to tell people that if you're making these for someone with celiac disease, make sure you use oats that are marked gluten free as well! Oats are naturally gluten free but are often processed with wheat or barley (two things we can't have). People with celiac disease can get sick from cross contamination! I have found that most recipes taste the same when using gluten free all purpose flour. It can be a little trickier with bread and dry foods like shortbread cookies though. If you don't use all purpose flour, you'll also probably need xanthan gum. Always check the package to be sure. Can't wait to try these, Danny! And thanks for thinking of us gluten free peeps! The more people try these recipes and open up to them, the less hostility we face. For some of us it's a real health concern, not a choice, but people aren't always kind about it.

Same thing holds true if a person is allergic to wheat/gluten, which is my problem; and it's a major pain as I have to literally read all the labels including for things including those that aren't food oriented (shampoo, conditioner, makeup, etc) so I don't have an allergic reaction. However, we are also super lucky to have a gluten free bakery 30-45 minutes each way from our home, so we can occasionally go and get special goodies without having to make them ourselves.

Kind of an off the topic question but I always wonder what the two extended pieces on the counter island are for? does anyone know? PS those cookies looks soo yummy if we weren't in a heat wave I would want to bake them!
I'll have to try making these and see how they hold up in my husband's lunch box that I send with him to work at night. I'm always looking for something sweet to send with him, that is a healthier homemade option. We are a gluten free household, as I'm allergic to wheat and gluten in all forms. We have our favorite gluten free bakery to drive to, however, it's 30-45 minutes each direction; and it gets expensive really fast. If you make enough gluten free items and make them properly you won't be able to tell the difference between a gluten free product and a product that has wheat/gluten in it.
We suggest making the cookies smaller and placing them in the freezer. Our videographer/assistant producer was able to take them home with her after filming without worry. -Andi

Use a small ice cream scoop to scoop the dough then u have the exact size of each then u can flatten them
He uses the scoop for a lot of his cookie recipes! This was just one where we didn’t have it readily available. ❤️ -Andi
