Goan-Style Mackerel Recheado | Recheado Paste Recipe | Fried Stuffed-Fish

- 'Recheado'- fiery red to the eyes, bold in flavor upon the tongue, warm and tingling to the throat and completely satisfying to the belly- this word is of Portuguese origin and translates to 'stuffed'. So, Fish Recheado literally means 'stuffed fish'.
'रेशादो'- रंग में लाल, जीभ पर स्वादिष्ट, गले में गर्म और झुनझुनी और पूरी तरह से पेट के लिए संतोषजनक- यह शब्द पुर्तगाली मूल का है और 'भरवां' में अनुवाद करता है। तो, मछली रेशादो का शाब्दिक अर्थ है 'भरवां मछली'।

Ingredients/ सामग्री :
For the Recheado Paste/ रेशादो पेस्ट के लिए:
1 medium-sized roasted Onion/ 1 मध्यम आकार का भुना हुआ प्याज
6 Dried Kashmiri Chilies/ 6 सूखे कश्मीरी मिर्च
6 Dried Bedki Chilies/ 6 सूखे बेडकी मिर्च
1 teaspoon Cumin seeds/ 1 चम्मच जीरा
1/4 teaspoon Turmeric powder/ 1/4 चम्मच हल्दी पाउडर
20 Peppercorns/ 20 काली मिर्च
6-8 Garlic cloves/ 6-8 लहसुन
1" piece of Ginger/ 1" अदरक का टुकड़ा
Tamarind (small lemon-size) soaked in warm water/ इमली (छोटा नींबू के बराबर) गर्म पानी में भिगोया हुआ
4-5 Tablespoons of White Vinegar/ सफेद सिरका के 4-5 चम्मच
1 heaped teaspoon Salt/ 1 चम्मच नमक
2 heaped teaspoons Sugar/ 2 बड़ी चम्मच चीनी
For the Fish-fry/ मछली-तलना के लिए :
Fish of your choice (eg. Mackerel)/ अपनी पसंद की मछली (जैसे बांगड़ा)
Salt/ नमक
Semolina (rava)/ सूजी (रवा)
Oil/ तेल

Hi there, I wanted to check if the masala can be used for other fish and not necessarily stuffed ? Just normal rub and marinate

Yes, this recheado masala can be used in fish of your choice. Mackerel, pomfret, squid are commonly used for stuffing. If you're using as a rub, marinate for 15-20 minutes at room temperature (or longer in the fridge) and then fry, preferably with a good coating of rawa (semolina). This way the masala doesn't char too much.

Hello, Alan! Yes, this recheado can be used for different varieties of fish (I recommend marinating the fish for sometime, say 10-15 minutes, and then frying). Try it once, and you'll come up with even more ideas to use the masala paste! Be creative 💫😊
