A tip - without the frosting, the cake would make ideal breakfast. Not high in sugar, plenty of carrot and apple goodness!

Easy, roast skinless hazelnuts, blend, add cocoa powder, add any sweetener, done.
Nahhh. Make a ganache with hazelnut milk and vegan dark chocolate. Mix the ganache with praliné (roasted hazelnuts blended with caramel).
Cocoa powder is a byproduct of chocolate making. It is a lesser ingredient.

I just made a spin-off of this carrot cake for my dad's birthday tonight. I didn't have the apple or the orange so I used what I had which was a lemon and dried out coconut meal and omg amazinggg. Thanks again for the inspo.

I had trouble cooking it as well, maybe the Canadian flour is different but it smelled and tasted incredible!!!! The orange zest is definitely a must.

this carrot cake was wonderful! i added 1/4 cup each of coconut shreds & raisins & replaced the oil w coconut oil. i also used a vegan cream cheese icing instead of the buttercream, but still... wow! 🤩 these would make great muffins too!
