So for anyone watching from Ireland, I'm in Cork City and could not get passionfruit juice for love nor money, they sell rubicon mango and pomegranate everywhere but no passionfruit 🙄🤔. I used Tesco "exotic juice" at first but was too like "juice" with alcohol in it and wasn't good but Irelands own brand "Sqeez tropical juice" was the winner, its nice and light and suited this recipe down to the ground. Patsy Hayes!

This was the first Pornstar martini I've tried and its epic, thank you. Tried a few others afterwards but sticking with this, only thing I've changed is fresh passion fruit for the juice, worked perfectly at home 😁 5 stars 🌟

Yup. I have got a new updated video…well a 2020 version, this video was 2019 and using Rubicon pre Sugar Tax. So the Rubicon is sweeter in this video to what you’ll buy now.
I can't find passionfruit juice anywhere in Australia! Will it work with fresh passionfruit that's blended? I really want to get lovely foam like the drink in your video.
Bondy... no I don’t use Foamer in my PSMs. No need as juice created that froth. Will fresh passion fruit work?! Well if you watch my updated video (I had to update the recipe because of the UK sugar tax) then the fresh passion replaces a Puree. And if you just use Puree, you won’t get the froth...and the drink itself will be thicker and “gloopier”...hence why I use Juice.
Shake it Harder. That’s all it is. No froth = poor shake. Give it some proper welly. No matter how hard you think you’re shaking, I promise you, you’re nowhere near close to a Bartender shake… 😉

Ha. I might have to do another Rum Cocktail. Just done Dead Mans Fingers. The thing with the Zombie...the whole reason it’s called a Zombie...is it’s because 3 different styles of Rums, (White, Dark, Gold...and in some cases also a combo of Pot Still and Column still Rums) then either the Overproof mixed in when making, or “crowned” with overproof. A zombie with any less than those 4 Rums just isn’t a Zombie. Then it’s just Lime, Pineapple Juice and Apricot Brandy. That is the original Don the Beachcomber famous Zombie. But other Bartenders/Cocktail Blogs think you can just add what you want...or even just 2 Rums. Well, I’d argue that’s just a Punch and not a Zombie. It’s like making a Pornstar martini with Pineapple Juice ❌ or a Rum and Lemonade and calling it a Cuba Libre ❌

the original recipe is double Vanilla...and I am a firm beliver in that too. But it all depends on the Vodka. Absolut Vanilia, Smirnoff Vanilla...yup 100% you want Double Vanilla becasue they are subtle in flavour. However JJ Whitley Vanilla is VERY punchy in the vanilla notes, so you could getaway without the Vanilla Syrup if you wanted too... but i do use JJ and i always use Vanilla Syrup too.
Admittedly the PSM is a sweeter drink. It’s not ‘classic’ in that sense. However it’s not an overly sweet cocktail either. This recipe was pre sugar tax in the UK. It’s my other video that’s more up to date. The Rubicon changed its recipe to dial back the sugar content.

Haha. Now I’m not the Cocktail Police, but Egg White in a PSM, you really shouldn’t need it. I do get this Q every day in my Insta DMs, and I promise them it’s just their Shake. You need to Shake it properly. No limp wristed stuff. Give it a proper Shake. Hard. Fast. Then you’ll get the froth. (Assuming you follow my recipe and have the same products!)
+Aimee McF Doug’s original recipe was Vanilla Vodka, and Vanilla Syrup. I personally think you’ll need the Vanilla Sugar for whatever Vodka you use. Try with and without. Everyone’s palate is different. But this is my recipe that I smash out every weekend. 👍

It’s a how long is a piece of string question. Every brand is different. Just follow the instructions of the brand. But failing that, but Vanilla Sugar. Every single supermarket sells it in the Coffee Aisle!

Hey Lucy, the reason i ha to update the recipe is becasue of the Sugar tax. The old Rubicon I used to use was awesome, however the new post sugar tax stuff tastes a bit different so I had to add the Purée in to bring it back to awesomeness. So yes, now it makes a huge difference. Puree is super easy to get. Amazon it up, next day delivery. Although i preferred Reál, Funkin still does the job well...and it will make a lot of difference to the Juice; stblive.uk/funkinpassionfruit
Just Play About to your own tastes; but i'd recommend; 50ml Vanilla Vodka 25ml Passoa 15ml Vanilla Sugar 1 decent sized Lime Wedge 25ml Purée 50ml Rubicon Guaranteed that'll taste AMAZING anyway, but then just try it with 20ml of vanilla Sugar...or maybe 25ml...but deffo start with 15ml

Oh. To make your own Vanilla Syrup. Well, that’s like cooking. Adjust to taste. It’ll depend on the Extract, or Vanilla Pod. Cheaper Extracts don’t have as much vibrancy as more expensive/better brands. So there is no “exact science”. Just make a small batch, then add more/less vanilla to suit. Failing that, but it!! It’s quicker and less faff! 😂
Hi Steve, this recipe is spot on thanks 👍 I’ve also dabbled with it and replaced the passion fruit juice with fresh pineapple juice and taste nice and you still get the froth. My question, I originally purchased some Monin. Passion fruit purée (large grey bottle, 1ltr), how would you use this as an alternative please? Possibly 25mm purée, 75mm pineapple juice? Thanks in advance 👍
M Thomas yeah I need to update the recipe in Video cos the Rubicon PF juice is now less sugar, so I use 25ml Puree to give it more ooomph. However, I’m not against using Pineapple...but that isn’t a Pornstar Martini, cos a PSM is a Vanilla and Passion Fruit Martini. By using Pineapple, you’re creating you’re own new cocktail 👍

Not really, because you need that vanilla sweetness. You could adapt slightly and add vanilla liqueur/Licor 43 and a tiny bit on normal sugar. But it wouldn’t really be the same taste.
Not the same like Steve said, but subbing a different syrup is a great way to come up with a new version/interesting riff on the cocktail. As long as the flavor of the syrup compliments the rest of the ingredients you'll be in great shape👍

Now here's the thing. I really don't rate the Cocktail without the juice. i think that is vital to the finished drink now. 100% puree just makes it too thick and gloopy and ruins the experience for me. The Rubicon is really easy to get in the UK, but if you're not UK then i understand why it'd be hard to find. But in the UK, it's in most bigger supermarkets....Always in the world foods aisle, espesh Tesco/Sainsburys. But Morrison's, Waitorse it tends to be in the juice aisle. Failing that, amazon or Ocado will deliver to your door. Failing that, plenty of other online retailers will sell it. Slightly more expensive than Ocado, but you can get it.
So. It’s just making your own Sugar Syrup. You can buy it in quite easily. Most brands will make a Vanilla Sugar. But. If you don want to make it, Raul amounts of Sugar to boiling water, then add your desired amount of Vanilla Essence/Extract. Amount depends on how much sugar.
Hey Scott, I can’t really. Every bottle of Essence or Extract is different. But they’ll all be like anything else, they’ll have instructions on the bottle. Some will need a Teaspoon of Vanilla. Some will need a few drops. It’s no different to making a cake….or asking how long a piece of string is. Just use Essence/Extract as you would in normal everyday life 👍
I just made 2 of these and I didn't get that creamy texture, seems abit watery. Could it be the ice I used? It's an icemaker but I wonder if it watered it down too much and broke up as quite alot of the ice looked slushy after the shake? Also, I bought the monin vanilla syrup and used that instead but it seems to have a horrible aftertaste in it
Sorry it didn't work for you, but if you follow my recipe, with the same ingredients, and shake for 10-12 seconds....not half hour... it should be perfect! Tried and tested after many...many....years! Although this was pre UK Sugar tax and the Rubicon has changed! I'm about to do another one now and if that canes out perfect then I know it's all about the shaking!! Will report back.
@@StevetheBarmanUK yes mate, did the wife another one and again got the creamy head on it so I'm happy. I do use the monin vanilla syrup which I think isn't great but I just use a tiny bit and then its OK. Think that's the only thing il change. The vodka I use is belvedere which I think is good for this. The wife very happy. Il stick to this recipe rather than your newer one for now as the rubicon has a better shelf life 😂
+Angel B it’ll literally be your Shake!! You need to shake it HARD!! Don’t be shy of it. Don’t be frightened. Just give it a good old vigorous shake. Froth guaranteed!!

You can add a blender ball to your tin to help aerate the cocktail a bit more. Works especially well for dry shakes when you need that tight froth from an egg white cocktail👍

You need to give the Cocktail a damn good shake and all will be good! No limp wrists. No Half arsing it. Show it who's boss! Also... I've just re-read the Comment. "NEARLY" the same ingredients??? What have you changed??
9 times out of 10, it’s just the wrist action. You’re not shaking hard enough. HOWEVER, as you may have seen I had to update this recipe because of the UK Sugar Tax. The Rubicon Juice had “less body” to it because they had to make it with less sugars. If you haven’t seen my updated video; ua-cam.com/video/HJSRWzfaO40/v-deo.html Now if you follow that and don’t get a froth, it’s 100% you and you’re not shaking hard enough.

Ice is massively important, yup. Decent size Ice and plenty of it. NEVER skimp on the Ice! The shape doesn't matter though...

Guaranteed that'll taste AMAZING anyway, but then just try it with 20ml of vanilla Sugar...or maybe 25ml...but deffo start with 15ml

Oh. To make your own Vanilla Syrup. Well, that’s like cooking. Adjust to taste. It’ll depend on the Extract, or Vanilla Pod. Cheaper Extracts don’t have as much vibrancy as more expensive/better brands. So there is no “exact science”. Just make a small batch, then add more/less vanilla to suit.
Failing that, but it!! It’s quicker and less faff! 😂

Hi Steve, this recipe is spot on thanks 👍 I’ve also dabbled with it and replaced the passion fruit juice with fresh pineapple juice and taste nice and you still get the froth. My question, I originally purchased some Monin. Passion fruit purée (large grey bottle, 1ltr), how would you use this as an alternative please? Possibly 25mm purée, 75mm pineapple juice? Thanks in advance 👍
M Thomas yeah I need to update the recipe in Video cos the Rubicon PF juice is now less sugar, so I use 25ml Puree to give it more ooomph. However, I’m not against using Pineapple...but that isn’t a Pornstar Martini, cos a PSM is a Vanilla and Passion Fruit Martini. By using Pineapple, you’re creating you’re own new cocktail 👍
Steve the Barman thanks for your reply Steve. If you use 25ml purée what would you use to make up the other 75ml, rubicon passion fruit juice? Even hunted around for that in supermarkets, only one out of the big 3 I found it in was Asda

2:1 Sugar syrup. (2 Sugar to 1 Water). Add Vanilla Extract to taste. 👍

There is a newer video to this…this video was pre sugar tax in the UK. The Rubicon is now thinner and needs a Puree for it to taste 100%

Not really, because you need that vanilla sweetness. You could adapt slightly and add vanilla liqueur/Licor 43 and a tiny bit on normal sugar. But it wouldn’t really be the same taste.
Not the same like Steve said, but subbing a different syrup is a great way to come up with a new version/interesting riff on the cocktail. As long as the flavor of the syrup compliments the rest of the ingredients you'll be in great shape👍

If I was to use passionfruit puree instead of juice, how much would I need? I can't seem to find passionfruit juice!

Now here's the thing. I really don't rate the Cocktail without the juice. i think that is vital to the finished drink now. 100% puree just makes it too thick and gloopy and ruins the experience for me. The Rubicon is really easy to get in the UK, but if you're not UK then i understand why it'd be hard to find. But in the UK, it's in most bigger supermarkets....Always in the world foods aisle, espesh Tesco/Sainsburys. But Morrison's, Waitorse it tends to be in the juice aisle. Failing that, amazon or Ocado will deliver to your door. Failing that, plenty of other online retailers will sell it. Slightly more expensive than Ocado, but you can get it.

So. It’s just making your own Sugar Syrup. You can buy it in quite easily. Most brands will make a Vanilla Sugar. But. If you don want to make it, Raul amounts of Sugar to boiling water, then add your desired amount of Vanilla Essence/Extract. Amount depends on how much sugar.

Hey Scott, I can’t really. Every bottle of Essence or Extract is different. But they’ll all be like anything else, they’ll have instructions on the bottle. Some will need a Teaspoon of Vanilla. Some will need a few drops. It’s no different to making a cake….or asking how long a piece of string is. Just use Essence/Extract as you would in normal everyday life 👍

I just made 2 of these and I didn't get that creamy texture, seems abit watery. Could it be the ice I used? It's an icemaker but I wonder if it watered it down too much and broke up as quite alot of the ice looked slushy after the shake?
Also, I bought the monin vanilla syrup and used that instead but it seems to have a horrible aftertaste in it
Sorry it didn't work for you, but if you follow my recipe, with the same ingredients, and shake for 10-12 seconds....not half hour... it should be perfect! Tried and tested after many...many....years! Although this was pre UK Sugar tax and the Rubicon has changed! @@StevetheBarmanUK hi mate, I made another 2 after sending my message all with the same ingredients but this time gave it a PROPER good shake for 15 seconds or so and it came out perfect. I'm about to do another one now and if that canes out perfect then I know it's all about the shaking!! Will report back.

@@StevetheBarmanUK yes mate, did the wife another one and again got the creamy head on it so I'm happy. I do use the monin vanilla syrup which I think isn't great but I just use a tiny bit and then its OK. Think that's the only thing il change.
The vodka I use is belvedere which I think is good for this.
The wife very happy. Il stick to this recipe rather than your newer one for now as the rubicon has a better shelf life 😂

Ha, same answer every time... Shake Harder. No feeble 5 second shakes. Shake hard...like for any cocktail... for 10-12 seconds. Give it some welly!!!
You can add a blender ball to your tin to help aerate the cocktail a bit more. Works especially well for dry shakes when you need that tight froth from an egg white cocktail👍

9 times out of 10, it’s just the wrist action. You’re not shaking hard enough. HOWEVER, as you may have seen I had to update this recipe because of the UK Sugar Tax. The Rubicon Juice had “less body” to it because they had to make it with less sugars. If you haven’t seen my updated video; ua-cam.com/video/HJSRWzfaO40/v-deo.html Now if you follow that and don’t get a froth, it’s 100% you and you’re not shaking hard enough.
