Passoa makes this a whole other drink compared to another passionfruit liquor like Chinoa. Where Chinoa keeps true to passionfruit-tart-into-vanialla-finish theme (and more yellow color) Passoa takes the drink into sorta general tropical direction (more orange-brown) and dry-ish finish. While both are good in their own ways, I almost think of them as two different cocktails.

If you use my Ratios, then that’s exactly how the cocktail should be. If it’s too sweet for you, that’s cool. But it’s not supposed to be anything else tbh. It’s why it’s the UKs most popular cocktail for years. On the sweetness scale, it’s not up there with Pina Coladas. But it’s also not as dry as a Daiquiri either.
Same here, made to ratios and was WAAYY too sweet. Original formula with Funkin Passionfruit puree much better. I've looked up Rubicon passion fruit juice - it's actually 35 grams per 250ml...maybe different sugar content for different markets?
Used this recipe, only alterations I made were using simple syrup (15ml) and a tiny bit of vanilla bean paste instead of the vanilla syrup. I found it far, far too sweet and would omit the syrup next time. The vanilla paste i used added enough of that flavour along with the vanilla vodka, so I wont be using additional sweetener next time.
Great recipe Steve, just one question.. is jj Whitley vanilla vodka the same as jj Whitley vanilla Russian vodka?? not really sure if they're a difference or not
Ha. No, no difference. It’s just a rebrand. VERY SLOW in rolling out as it announced early October. They’ve also got other flavours too. But all there Vodkas will sport “Russian” on the labels very soon.
@Steve the Barman Great video! It seems Rubicon has changed the recipe to use sweetener. On ocado all the reviews are really bad. Have you tried the new recipe? Would you still recommend this one (and maybe in different ratio?) or does this change things? Many thanks

Ms Betters Bitters is my brand of Bitters stblive.uk/msbettersbitters As for the PSM. If you’re going out and out PSM...there’s never Pineapple juice in it. It just won’t be the same. It’s a Passion Fruit and Vanilla Martini. I just use a bit of Passion Fruit Juice as I find just using Passion Fruit Puree makes it too thick and gloopy. So I always go 25ml Puree and 50ml Juice. Both easy to get in UK. However, I am embarking on a whole series of flips and twists for the PSM. So I am playing about with various serves...like my Halloween one. I even got a posh one coming this week too. But if you want proper...and you wanna blow peoples minds...never ever ever use Pineapple. Get some Rubicon Passion Fruit. 😉👍
Sorry. Should say... PSM proper proper should be 50-75ml of Passion Fruit Puree. No juice at all. But I use juice as it’s too thick. Also. Up your Vodka. 50ml 👌

Yeah. Don’t forget Doug created his loooong before Passion Fruit Puree was easily available. 2003. He obv used 2-3 Passion Fruits. Deffo no juice. Funkin was only born in 1999...but wasn’t readily available until 2005ish... and even then, only on trade. Ocado and Amazon only really sold it in last 3-4 years. But now we can Puree easily...and multiple Brands. And I adapted and have become well known for my recipe...simply because of 2 reasons... mine tastes AMAZING. And all the Ladies LOVE the froth which you don’t get from just Puree! 😉😂
I can’t get hold of Rubicon for a reasonable price at all at the moment...the joys of lockdown. I’ve got passion fruit puree but what other juice can I use? Would pineapple be a reasonable substitute?
A lot of Bars will actually use Pineapple Juice with a Passion Fruit Purée as standard. So it does work. But in my opinion, it's just not the same. Tasty. But not the same! Also, some supermarkets will do a Tropicana Passion Fruit and Mango I think it is...
@@kiesut9122 Sorry to butt in but I can rarely find Rubicon passion fruit too so I use the Sainsbury's own brand pineapple, mango and passion fruit juice (found in the long life milk/juices section not the fridge) for pornstar martinis and it works a charm especially if you add a little more passion fruit purée/syrup to enhance the flavour. Much easier to find and only 90p per litre 😊 hope that's helpful!

Yes, I use ODK now. You have to remember, this is an older video. ODK wasn't as properly stocked when i made it. Now i can pretty much guarantee its 10x easier to get than Reál. It's very well stocked at Drinkstuff for example. I think they're great Purees as you'll probably realise from most of my videos since Mid 2020.

Hi Steve, great videos, instead of using passion fruit puree, could I use passion fruit coulis. I couldn't get hold of puree. I realise it might be sweeter so might have adjust the sugar syrup or omit it completely. Thanks
Yes, absolutely! it won't be quite the same as Coulis is different to Puree. BUT... yeah why not. A lot of my Online Zoom Classes, they'll buy coulis. I think most are Mango & Passion Fruit or something. I deffo think you need the Passion fruit Juice to go with it though. all that said, Puree is an absolute doddle to buy online. Drinkstuff, Amazon, Master of malt, Ocado... and many many others. Whether you want Funkin, ODK or Real. And of course the other option...fresh passion fruits. 1-1.5 per cocktail will work.

Potentially yeah. I'll be honest, i've not had the Ciroc Vodka's but it's something i deffo want to get in to. If you've already got a bottle, great, but if not, the JJ Whitley is literally half the price and does pack a punch!! My Ciroc Vanilla price is just under £28 and thats Trade. JJ Whitley is currently £15 if that helps.
Hi Steve I've mastered the art of a pornstar martini but I'm heading to a mates house this weekend . Instead of me taking all my ingredients could I just individually do the measurements for say 8-10 and put them into a jug then then distribute into shaker to serve one by one? Do you think this could work
Yeah, kind of. The Prosecco Shot is actually a Palate Cleanser. As the original Recipe was 100% Purée, it was quite thick and gloopy. So a Shot of Prosecco was served for you to sip in between each sip of the Cocktail. However, not many people know that story...so some down it before the cocktail and some just chuck it in to the cocktail.
Hey Steve! Quick question, what are your thoughts on the ODK passion fruit puree? Just thinking... its cheaper than real, and it has a pretty good shelf life compared to Funkin.
I’ve done multiple videos on the ODK stuff. You’ll see it in a lot of videos. So you’ll see my opinions. I live them. Also you’ll see that I do a lot of videos about them on my other channel. Drinkstuff. Multiple cocktail videos. So yeah...ODK for hone use and smaller Bars. Brilliant. However, if you’re high volume...there is nothing better than Funkin for pure taste. It’s just the shelf life that make them not so great for Home use.
Hahaha, my tour would literally last seconds. It's the end of my garage! I wish i had the space for a proper Bar set up, but the rest of the garage is just shelving units with bottles stacked 4/5 deep. And not lit up. My project fo 2020 was a big Garden Studio. But now due to Covid... and no actual Events Work coming in for 3-4 months, thats now not going to happen!!! 😰😂
No, I haven’t. But I’ll be honest, I wouldn’t use a £25-£30 Bottle in Cocktails where there’s plenty of other flavours to drown out the base spirit. As long as you have a decent Vanilla forward Vodka, it’s banging. JJ Whitley for £14-£16 is just epic for this now.
Cos it’s not the done thing! 😂 You could do at home, but it’s that thing, the ice from the glass has already melted. So not as cold either. So a Bar would use fresh ice to shake, and if using ice in the actual drink, again use fresh ice in the finished drink.
Taste a little, but it will change the consistency. Thats the biggy. Remember, Syrups are thinner, Purees/Fruity Mixes are a lot thicker. So they will give the impression of a different drink. BUT, there is no right or wrong. You do you, and don't let others tell you what to do! I'm just here for Inspiration. If you wanna use Syrup...AND YOU LOVE IT... do it! Let me know how it works! (And soz for the delay... was away and just playing catch up now with all the comments!)
It’s almost impossible to get the real passionfruit puree in the Netherlands. Do you have a good alternative?. Really sad about it, was looking forward to use the exact recipe
I assume you can get real life Passion Fruits?! You can just use them. I just talk about Puree as it’s cheaper because it’s mass produced...and easy to keep on hand. But obviously Puree is just Fresh Passion Fruit. 👍

If you’ve used the same ingredients, it’ll literally just be your shake. SHAKE HARDER!! 99 times out of 100, that’s all it is. People just don’t shake any cocktails hard enough!

I have the best memories of a Pornstar Martini that a bar near my uni made, but having just left, I’m on the hunt to make my own as good as their one - as every other I’ve had doesn’t come close! Yup. Deffo video 5 in the series. Actually this video. I promise you, you’d love it. I agree with the thickness. That’s why I add Puree to the Juice. But a 100% Puree...nah that’s waaaaay to thick and gloopy. My Hen Parties and Cocktails Classes love it.
Ha. Nope. I’m not sponsored by anyone (yet). The Reals are there for 3 reasons. 1- I love them and they taste great. 2- they’re long life and shelf stable (Funkin aren’t). 3- ODK doesn’t fit on my Shelf. I do also use a few ODK Puree too. Obscure flavours like Pineapple, Pear, Papaya, Kiwi etc. However, Real, in their own right are now steadily winning Bartenders over. Just look at the recent Bartender Brand awards. They scooped 3 Golds in Blind tasting and Value. The Blueberry one I’d have on Toast every day of the week!!

Wow!! Thank you. So... if you've followed my recipe pretty much to the letter, alls it is, is your wrist action! 😉😂 I laugh, but it's the truth. Thast why i do cocktail masterclass for Hen Parties. Honestly, alls it will be is that you haven't shaken the Cocktail Hard Enough. I see it week in week out on Hen Parties. Some will get the froth, some won't. Just put it back in the Tin, Shake it HARDER. Then strain it out again! Tag me on Insta on your next effort!!
So, on events, I would pre batch, BUT NEVER pre Serve. So for example, I got used to making 3...maybe even 4 at a time in one shaker. So i'd have 4-5 Shakers Ready to go giving me 12-15 PSMs ready to be Shaken. You could do the same in a Jug, then just pour into a Shaker and Shake. I do another YT Bartender who Blends them therefore making 10-12 in one hit HOWEVER, that will give a very different effect, not something I'd ever do. Just bear in mind, for maximum WOW, alwasy Shake and serve when a guest wants another one. NOT 15 mins before they want another one. They need to be COLD and Frothy!

Yeah. Cos 300ml is 10.5oz ish. But you can always make bigger cocktails. For me though I’d just never use them. Too big. As I said, for me 7oz is about the ball Park.
Do you need to use vanilla vodka or can you just use normal vodka and vanilla syrup? Don't want to shell out £20 for a couple cocktails when I have vodka in the house.
So I do use Vanilla Vodka. There is a very slight difference. BUT, go ahead and just use Plain Voddie. My whole mantra is make do with what you got...or can find. (That said, ive got a whole load of Pornstar Martini ingredient inspiration on my channel. Plenty of other recipes to use the ingredients 😉)

Depends what you mean by “bottle types”. For most of my videos, I do juice limes before shooting, because if I’m only filming 5-6 videos, then I may only need 3-4 limes. (And you can see me juice on some of my IGTVs behind the scenes!). However, if I’m filming a lot for Patreon or Clients...and I admit this on screen a lot too, there are 2-3 products out there that do the same job. Funkin for example do 100% pure pour Lime and Lemon juice. ODK also do Bottles of 100% Juice. And Johnson’s also do freshly squeezed Juice. So it just depends. These 3 brands are the only ones I’d touch as there is absolutely nothing added to them. There are completely different to Jif Lemon or Supermarket Shelf Stable stuff.

I wouldn’t be able to get my hands on those replacements you mentioned in time and I can imagine the supermarket bottles are awful and would ruin it
Hey Saskia, think i recognise your name pop up on my Insta too?? Now the answer to this really depends on where you are. If you're UK, Rubicon Passion Fruit is REALLY easy to find. Most medium/bigger Tescos sell it. Most Morrisons sell it. (always look down the Worlds foods Aisle...not Juices). Ocado sell it. Amazon sell it...plus they also obviously do Morrisons home delivery now too. And Tim at TheDrinkshop sells loads because of my Videos!! stblive.uk/tdsrubicon 😂 HOWEVER, outside the UK, I'm not too sure to be honest. But here's 2 other hacks... Dougs original recipe obviously didn't use Juice, that's my addition which I started in the late 2000s. He just used Funkin Puree (very originally...about 3 fresh Passion fruits). Which does make it thicker and gloopier. But that is the original recipe. The other method is Pineapple Juice. Many lower-end Bars use Pineapple Juice. it does work... but not as awesome as the Rubicon Passion Fruit Juice. Hope that helps?? If you make it, tag me on Insta!!

Great Video. Made my first ever PM yesterday. But had no Vanilla Vodka and no Passion Fruit Puree. Used 75ml Passion Fruit Juice and a bit more of Vanilla Sugar instead. Delicious.
That’s my original recipe pre sugar tax...there’s another PSM Video from 2019. Nearly 30k views. That’s the recipe I was rocking out for years. Still flippin tasty! 👏
Syrup is anything between 20-30% fruit concentrate and 70-80% sugar. Puree is traditionally just that, Fruit Puree. Example Funkin Passion Fruit is 90% actual Passion Fruit. (ODK is kinda of a Puree cross Syrup. It’s 50% Fruit, 50% Sugar which is why it has a longer shelf life). Funkin is only of the only true Puree on the market. Basically as Puree is just a practical easier version of the real fruit. A syrup is Sugar based.

No need to smash it. Just defrost it!! You’ve got proper passion fruit then! As for the Syrups...just remember they are sweetened. So they’re gonna be sweeter and recipes need adjusting. 👍

I just use a bit of Passion Fruit Juice as I find just using Passion Fruit Puree makes it too thick and gloopy. So I always go 25ml Puree and 50ml Juice. Both easy to get in UK.
However, I am embarking on a whole series of flips and twists for the PSM. So I am playing about with various serves...like my Halloween one. I even got a posh one coming this week too. But if you want proper...and you wanna blow peoples minds...never ever ever use Pineapple. Get some Rubicon Passion Fruit. 😉👍
Sorry. Should say... PSM proper proper should be 50-75ml of Passion Fruit Puree. No juice at all. But I use juice as it’s too thick.
Also. Up your Vodka. 50ml 👌

Yeah. Don’t forget Doug created his loooong before Passion Fruit Puree was easily available. 2003. He obv used 2-3 Passion Fruits. Deffo no juice. Funkin was only born in 1999...but wasn’t readily available until 2005ish... and even then, only on trade. Ocado and Amazon only really sold it in last 3-4 years. But now we can Puree easily...and multiple Brands. And I adapted and have become well known for my recipe...simply because of 2 reasons... mine tastes AMAZING. And all the Ladies LOVE the froth which you don’t get from just Puree! 😉😂

What would be better the purée or the juice?
I can’t get hold of Rubicon for a reasonable price at all at the moment...the joys of lockdown. I’ve got passion fruit puree but what other juice can I use? Would pineapple be a reasonable substitute?
A lot of Bars will actually use Pineapple Juice with a Passion Fruit Purée as standard. So it does work. But in my opinion, it's just not the same. Tasty. But not the same! Also, some supermarkets will do a Tropicana Passion Fruit and Mango I think it is...

@@kiesut9122 Sorry to butt in but I can rarely find Rubicon passion fruit too so I use the Sainsbury's own brand pineapple, mango and passion fruit juice (found in the long life milk/juices section not the fridge) for pornstar martinis and it works a charm especially if you add a little more passion fruit purée/syrup to enhance the flavour. Much easier to find and only 90p per litre 😊 hope that's helpful!
Hi Steve, I’ve made one, but the color is very light pink. How come? My ingredients were; normal vodka, passion fruit puree, passoa, vanilla syrup, egg white.
Egg White.... nooooo. No egg white. Then i'd imagine you used way too much Passoa. Just follow my recipe, you'll be fine.

Yes, I use ODK now. You have to remember, this is an older video. ODK wasn't as properly stocked when i made it. Now i can pretty much guarantee its 10x easier to get than Reál. It's very well stocked at Drinkstuff for example. I think they're great Purees as you'll probably realise from most of my videos since Mid 2020.

Yes, absolutely! it won't be quite the same as Coulis is different to Puree. BUT... yeah why not. A lot of my Online Zoom Classes, they'll buy coulis. I think most are Mango & Passion Fruit or something. I deffo think you need the Passion fruit Juice to go with it though. all that said, Puree is an absolute doddle to buy online. Drinkstuff, Amazon, Master of malt, Ocado... and many many others. Whether you want Funkin, ODK or Real. And of course the other option...fresh passion fruits. 1-1.5 per cocktail will work.

Potentially yeah. I'll be honest, i've not had the Ciroc Vodka's but it's something i deffo want to get in to. If you've already got a bottle, great, but if not, the JJ Whitley is literally half the price and does pack a punch!! My Ciroc Vanilla price is just under £28 and thats Trade. JJ Whitley is currently £15 if that helps.
Hi Steve I've mastered the art of a pornstar martini but I'm heading to a mates house this weekend . Instead of me taking all my ingredients could I just individually do the measurements for say 8-10 and put them into a jug then then distribute into shaker to serve one by one? Do you think this could work
I thought Pornstar's were paired with a shot of prosecco (or any other fizzy white wine). I thought you also do a part on the shot it comes with.
Yeah, kind of. The Prosecco Shot is actually a Palate Cleanser. As the original Recipe was 100% Purée, it was quite thick and gloopy. So a Shot of Prosecco was served for you to sip in between each sip of the Cocktail. However, not many people know that story...so some down it before the cocktail and some just chuck it in to the cocktail.

I’ve done multiple videos on the ODK stuff. You’ll see it in a lot of videos. So you’ll see my opinions. I live them. Also you’ll see that I do a lot of videos about them on my other channel. Drinkstuff. Multiple cocktail videos. So yeah...ODK for hone use and smaller Bars. Brilliant. However, if you’re high volume...there is nothing better than Funkin for pure taste. It’s just the shelf life that make them not so great for Home use.

Hahaha, my tour would literally last seconds. It's the end of my garage! I wish i had the space for a proper Bar set up, but the rest of the garage is just shelving units with bottles stacked 4/5 deep. And not lit up. My project fo 2020 was a big Garden Studio. But now due to Covid... and no actual Events Work coming in for 3-4 months, thats now not going to happen!!! 😰😂

No, I haven’t. But I’ll be honest, I wouldn’t use a £25-£30 Bottle in Cocktails where there’s plenty of other flavours to drown out the base spirit. As long as you have a decent Vanilla forward Vodka, it’s banging. JJ Whitley for £14-£16 is just epic for this now.

Why don't you use the ice from the glasses in the shaking process? That way you don't have to throw it away.
Cos it’s not the done thing! 😂 You could do at home, but it’s that thing, the ice from the glass has already melted. So not as cold either. So a Bar would use fresh ice to shake, and if using ice in the actual drink, again use fresh ice in the finished drink.

Taste a little, but it will change the consistency. Thats the biggy. Remember, Syrups are thinner, Purees/Fruity Mixes are a lot thicker. So they will give the impression of a different drink. BUT, there is no right or wrong. You do you, and don't let others tell you what to do! I'm just here for Inspiration. If you wanna use Syrup...AND YOU LOVE IT... do it! Let me know how it works! (And soz for the delay... was away and just playing catch up now with all the comments!)

I assume you can get real life Passion Fruits?! You can just use them. I just talk about Puree as it’s cheaper because it’s mass produced...and easy to keep on hand. But obviously Puree is just Fresh Passion Fruit. 👍

If you’ve used the same ingredients, it’ll literally just be your shake. SHAKE HARDER!! 99 times out of 100, that’s all it is. People just don’t shake any cocktails hard enough!

Yup. Deffo video 5 in the series. Actually this video. I promise you, you’d love it. I agree with the thickness. That’s why I add Puree to the Juice. But a 100% Puree...nah that’s waaaaay to thick and gloopy. My Hen Parties and Cocktails Classes love it.

Ha. Nope. I’m not sponsored by anyone (yet). The Reals are there for 3 reasons. 1- I love them and they taste great. 2- they’re long life and shelf stable (Funkin aren’t). 3- ODK doesn’t fit on my Shelf.
I do also use a few ODK Puree too. Obscure flavours like Pineapple, Pear, Papaya, Kiwi etc.
However, Real, in their own right are now steadily winning Bartenders over. Just look at the recent Bartender Brand awards. They scooped 3 Golds in Blind tasting and Value. The Blueberry one I’d have on Toast every day of the week!!

Wow!! Thank you. So... if you've followed my recipe pretty much to the letter, alls it is, is your wrist action! 😉😂 I laugh, but it's the truth. Thast why i do cocktail masterclass for Hen Parties. Honestly, alls it will be is that you haven't shaken the Cocktail Hard Enough. I see it week in week out on Hen Parties. Some will get the froth, some won't. Just put it back in the Tin, Shake it HARDER. Then strain it out again! Tag me on Insta on your next effort!!
You could use a drop of Ms. Better's Bitters Miraculous Foamer or an eggwhite
Hi Steve how would you recommend I go about making these for a party, would making a lot of them in advance be a bad idea ?
So, on events, I would pre batch, BUT NEVER pre Serve. So for example, I got used to making 3...maybe even 4 at a time in one shaker. So i'd have 4-5 Shakers Ready to go giving me 12-15 PSMs ready to be Shaken. You could do the same in a Jug, then just pour into a Shaker and Shake. I do another YT Bartender who Blends them therefore making 10-12 in one hit HOWEVER, that will give a very different effect, not something I'd ever do. Just bear in mind, for maximum WOW, alwasy Shake and serve when a guest wants another one. NOT 15 mins before they want another one. They need to be COLD and Frothy!

Yeah. Cos 300ml is 10.5oz ish. But you can always make bigger cocktails. For me though I’d just never use them. Too big. As I said, for me 7oz is about the ball Park.
Do you need to use vanilla vodka or can you just use normal vodka and vanilla syrup? Don't want to shell out £20 for a couple cocktails when I have vodka in the house.
So I do use Vanilla Vodka. There is a very slight difference. BUT, go ahead and just use Plain Voddie. My whole mantra is make do with what you got...or can find. (That said, ive got a whole load of Pornstar Martini ingredient inspiration on my channel. Plenty of other recipes to use the ingredients 😉)

Depends what you mean by “bottle types”. For most of my videos, I do juice limes before shooting, because if I’m only filming 5-6 videos, then I may only need 3-4 limes. (And you can see me juice on some of my IGTVs behind the scenes!). However, if I’m filming a lot for Patreon or Clients...and I admit this on screen a lot too, there are 2-3 products out there that do the same job. Funkin for example do 100% pure pour Lime and Lemon juice. ODK also do Bottles of 100% Juice. And Johnson’s also do freshly squeezed Juice. So it just depends. These 3 brands are the only ones I’d touch as there is absolutely nothing added to them. There are completely different to Jif Lemon or Supermarket Shelf Stable stuff.

I wouldn’t be able to get my hands on those replacements you mentioned in time and I can imagine the supermarket bottles are awful and would ruin it

Hey Saskia, think i recognise your name pop up on my Insta too?? Now the answer to this really depends on where you are. If you're UK, Rubicon Passion Fruit is REALLY easy to find. Most medium/bigger Tescos sell it. Most Morrisons sell it. (always look down the Worlds foods Aisle...not Juices). Ocado sell it. Amazon sell it...plus they also obviously do Morrisons home delivery now too. And Tim at TheDrinkshop sells loads because of my Videos!! stblive.uk/tdsrubicon 😂 HOWEVER, outside the UK, I'm not too sure to be honest. But here's 2 other hacks... Dougs original recipe obviously didn't use Juice, that's my addition which I started in the late 2000s. He just used Funkin Puree (very originally...about 3 fresh Passion fruits). Which does make it thicker and gloopier. But that is the original recipe. The other method is Pineapple Juice. Many lower-end Bars use Pineapple Juice. it does work... but not as awesome as the Rubicon Passion Fruit Juice. Hope that helps?? If you make it, tag me on Insta!!

Great Video. Made my first ever PM yesterday. But had no Vanilla Vodka and no Passion Fruit Puree. Used 75ml Passion Fruit Juice and a bit more of Vanilla Sugar instead. Delicious.

Probably a stupid question, but what is the difference between a syrup and a purée? 😄
Syrup is anything between 20-30% fruit concentrate and 70-80% sugar. Puree is traditionally just that, Fruit Puree. Example Funkin Passion Fruit is 90% actual Passion Fruit. (ODK is kinda of a Puree cross Syrup. It’s 50% Fruit, 50% Sugar which is why it has a longer shelf life). Funkin is only of the only true Puree on the market. Basically as Puree is just a practical easier version of the real fruit. A syrup is Sugar based.

No need to smash it. Just defrost it!! You’ve got proper passion fruit then! As for the Syrups...just remember they are sweetened. So they’re gonna be sweeter and recipes need adjusting. 👍
