My advice on writing diversely comes down to:
1. Listen more than you talk
2. Read the books that are written by, far, and about the culture you’re trying to learn
3. Be willing to set the story down if you can’t do it justice

As far as race goes, if you're writing fantasy it doesn't really matter, unless you're writing an urban fantasy or fantasy themed after a specific minority.
But with a generic fantasy world, white writers please feel free to make as diverse as you want.
The lived experience of the characters at that point, is entirely up to your design.
