Things I ALWAYS do to improve my Japanese curry: 1) buy the Java (best imo) or Vermont curry brands, they taste more rich and flavourful than the standard golden curry, 2) caramelize the onions, and add even more onions at the potato + carrot stage so you can see bits of onion in the final dish, 3) add grated apple and cook it down with the other veggies, 4) use good quality beef or chicken stock if you have it, 5) finish with a few knobs of butter, 1 tbsp each of ketchup, soy sauce, and Worcestershire sauce (or even better - Japanese Bulldog/tonkatsu sauce) and adjust these to taste. Some people even like to add chocolate or coffee to deepen the flavour! These additions will truly make your curry taste and look like the restaurant quality curries you find in Japan!
damn i have been told twice this exact curry recipe, caramelized onion, grated apple, chocolate! i seriously need to do this now i’ve only ever gone as far as to caramelize my onions but i gotta hit it with an apple and chocolate next time
I grew up eating Japanese curry and it is truly a national icon. There is so much culture around curry in Japan. It's a staple dish when you go out camping, as it's a simple dish that everyone can help make. And because it's so dead simple, pretty much everyone has their own version, with different regions and prefectures adding their own local vegetables to make a version unique to their area. And because it's such a reliable dish that's frankly difficult to mess up and fairly healthy, it's one of the main dishes served at schools and during disaster relief.
Instantly bought the golden curry blocks and tried this yesterday, mixing veggies in my fridge, adding a fish filet made in the oven and of course, rice. It was delicious and it will definitely be added to the family menu! 🙏🏻
Unless y'all made the actual roux before hand, its not actually curry you made. Cause a chocolate bar doesn't replace the pre-made roux blocks cause that's already the mix of curry spices
i love to make japanese curry when i am almost out of groceries. i always have the curry around so i just add whatever random fresh or frozen veggies i have left, sometimes chinese sausage too!
what a generous rating!! Makes me even more proud to be Japanese haha My dad gave me a tip when making curry, to mix the different flavors of curry (the spicy one and sweet one), and I can confirm that it tastes better somehow 😂
I will try this curry, it looks amazing! I would love for you to try the Mexican national dish, mole poblano, but damn, good mole paste is hard to find overseas and making it from scratch is... well... it's a complicated dish lol
i have japanese and peruvian roots, and i’m very proud to say that both cultures have amazing food. you should do a peruvian dish next, maybe ceviche or lomo saltado, there are plenty of options really :)
I love cerviche! I first had it in the Philippines, where it had been introduced from Peru by the Manilla-Acapulco Galleon trade that lasted from the early 1500s though to Mexican Independence from Spain in the early 1800s.
Since I've made curry for Christmas I eat it every day now (made it again after it was over). I'm obsessed. The pre made pack is too expensive here, so I just make the roux myself (takes 5 minutes), like my grandma taught me. Since then I've tried again, thickening with corn starch. It worked great, but I still prefer the result with the roux.
Every Japanese has a word or two about how to make curry rice. Of course it is all about the meat and the brand, but each person has his or her own secret condiments. For example, soy sauce, Worcestershire sauce, fruit, honey, and some even add coffee or chocolate. Anyway, I am very glad you enjoy Japanese curry rice! Keep up good work!
I love Japanese curry rice, I make mine with ground beef but otherwise it's pretty similar to how you do it. I have also put mushrooms and beets in with much success and I've had it at restaurants that had peas in it and it was good. I also like to layer the veggies in the pot in order of what needs the most cooking so mushrooms/onions, carrots, potatoes and then pre cooked beef on top and I also do the entire veggie cook/simmer with the curry mix already in instead of adding it at the end so that everything is nicely infused with curry goodness.
You should try the national dish from Argentina: locro. It's kind of a stew based on corn, potato, pumpkin, beans, meat and vegetables. There are too many ways to prepare it, but it's pretty good, and better on winter :)
I realy wanna see a version off our lovely german HAUSMANNSKOST ! Love your Videos. Im a broke student and i'm just cooking your recepies since i found your channel 🥰
Oh heck yeah!! Golden curry is awesome! I have been having this brand since I was in elementary school. After I opened my lunchbox with this curry, my classmates said it was stinky!! They were really missing out this hidden gem lol 🤣🤣🤣
You should totally try Portuguese food. We have a lot of good stuff! We have *Cozido à Portuguesa* (Portuguese stew), *sardinhas assadas* (grilled sardines), *Bacalhau à Brás* (cod with potato and beaten eggs, all mixed) and many others.
Please try Polish food. I would advise you to make our dumplings (we call them pierogi here), they are quite easy to make and don't take 10 years to get used to them lol.
It will be interesting when you rate Iceland's national dish. Officially, it is hákarl, a cured Greenlandic shark . It has been eaten since Viking times. I personally don't think it fits your description of a national dish. People eat it during certain special occasions, but it is not something typically eaten as a typical meal at one's home. My suggestions would instead be for kjötsúpa (traditional meat soup) or plokkfiskur, a tasty fish stew or hash.
Nice curry, but just some tips: Half a carrot, half an onion.1 mediun size potato 200g meat per 1 packet. so, for the curry you made you need to double your curry cubes.(that is why it was a bit watery) Also, you want to use a bigger pot so you can take the scum easier lastly, better melt the cubes first before putting it into the pot. This prevents the cube from just sinking end burning at the bottom of the pot. Anyways, great job! (side note: you can add some cumin/garam masala in the end for better flavour)
Adding double cubes won’t be necessary, adding a mix of water and flour could help with making it thicken Also more cubes means more sodium which is bad for you health
curry rice is what saved me in uni life! but i'd suggest people to try brands like java curry, vermont curry, or kokumaro instead of golden curry. i think those three are the best and can be found overseas. i may be weird but sometimes on hotter days, i'd make my curry slightly less thick because it's more refreshing to my throat if i can sip sip my hot and spicy curry 😂
Omg. I was very sceptical at the beginning, but after i have got the result i was completely blown away. The food should not be delicious like this one)) This is absolutely insane. Thank you for this recipe.
Please do try Vietnamese National dish! It’s super good. Our National dish is called Phó personally I like it with chicken because there are different meats which is pretty good! You don’t need to serve with meat but you NEED to use meat to make it. Remember to squeeze lime ontop when ur serving it. Can also have coriander in it.
@boo does a great job of covering most of the options to further improve the great taste of Japanese curry, but of all @boo's suggestions the simplest is the most important--caramelize your onions and then add at least one more onion roughly chopped when you add the potatoes and other vegetables. However much onion you think you need try doubling it and be amazed at the improvement. Another Pro-tip; I have frequently seen Japanese people clean out their fridge of every bit of leftover vegetable and meat and add it to their curry with great success.

Actually, my family from Hong Kong used to make Japanese curry rice using ACTUAL CHOCOLATE instead of that chunk. And it tasted awesome!
Chocolate is a classic add in for curry rice but it doesn't replace the roux since that contains the actual curry spices.
Chocolate??!!! Come on now!
Some people is the USA use chocolate in their chili. It works well in a lot of dishes. I could definitely see it being used in a curry.
