    This channel is a gold mine, I feel lucky to have found it so early on in your process and am looking forward to the content you will be putting out in the future. The story of your upbringing is particularly refreshing.
    Regarding the salt - absolutely it matters what kind you're using if you're measuring by volume (like you did) and not by weight. Depending on the size of the crystal, 1/4 cup could be a little bit of salt or a lot! Kosher salt tends to have a bigger crystal which is less salty. 1/4 cup of finely ground table salt could make this beautiful mozarella inedible.

      Oooh I'm not sure of that, sorry. I've only ever made it with raw whole milk, with some of the cream skimmed off.
