Blue Cheese: Why This Spanish Specialty Ages In Caves

- Cheesemaker Encarni Bada Herrero shows us the specialty of her hometown in the northern Spanish region of Asturias: Cabrales cheese.
The blue cheese is produced from three types of milk from cow, sheep and goat. It ages in old caves, and mold naturally occurs during the ripening process. Its is considered a local delicacy and is not produced anywhere else.
Around 30 small cheese dairies produce Cabrales. Most of them, including Encarni Bada Herrero’s, are family businesses. She takes us to her family’s cave and explains the process of making this special moldly cheese.

Omg! I had Cabrales cheese purely to try (I picked it out of about 20 other blues in the butcher shop) and distinctly remembered it had the wildest most acidic taste I’ve had in a cheese. My family didn’t like it as it was too strong but I enjoyed it for its intensity. I can’t eat it regularly cuz it’s quite an intense experience but it certainly left an impression ! Thanks for the vide DW ! If you’ve tried other known blues like Stilton or Roquefort, the Cabrales is even stronger. Definitely not for the inexperienced!

First time I experienced Cabrales was in my friend's cabin in the Picos , I thought some animal had died . Fantastic cheese ( not for the faint hearted ) Was in Alicante in March and after much searching found a big enough supermarket that stocked Cabrales .
