I use the True Lemon unsweetened powder when I roast a lemon pepper chicken or just baking chicken parts.

I am going to try these! I have king Arthur's lemon juice powder in the freezer. I am going to experiment with that.
I did this with a salad dressing at a special restaurant, it took me 6 months or more to get it just right. It is fun to try to make something that you really don't have a recipe for. True cook!

Hi Louise! Will be attempting to re-vamp your Lemon Cooler Cookie recipe to GF/LC. Will let you know how it works. I've converted a lot of traditional cookie recipes this way and haven't had a fail yet. For cookies/cakes I generally use either the King Arthur GF flour or Extra White Gold (the latter is definitely my fav for GF baking, but a bit pricey), and nearly always use Monkfruit sweetner in place of sugar. Use much less for equal level of sweetness, and make my own powdered sugar in the Ninja Storm, (similar to the Express Chopper, but a bit bigger and has a handle), with a sugar replacement as well and only sprinkle it on things, rather than coating. (personal preference) Hope all is well with you and Jeff. Being off FB has been AWESOME!
I was hoping for a version of this that doesn't call for the pre-packaged lemonade mix (or Kool-Aid powder, as the original used), since those mixes are hard to find in my area. We just use lemons or limes to make lemonade here. I'm going to have to try the citric acid, which is easy to find here.
The citric acid will work, just start with a small amount. I go over my suggestions in the written post. The True Lemon in the powdered sugar just gives an extra boost of flavor, but the cookies themselves are delicious and lemony on their own.

So doesn’t the crunchier cookie soften after you put the powdered sugar on them and after you store them in a Tupperware?
Nope! I kept this batch in a ziplock freezer bag at room temperature for 2 weeks and they were just as crunchy as when I first made them.

Umm i have never seen anyone zest upside down and I watch a lot of cooking videos lol
So, which way is upside down to you? I always get comments about the way I zest citrus, but it seems very natural to do it the way I do it. I say, do whatever works for you! LOL
@TheSaltedPepper the way you do it, is the only way I've ever seen anyone do it. Yes, it's more natural and your zest is going right in the bowl. The other way just seems not only unnatural, but less efficient 😊
