I can recommend serrano peppers, they taste similar to Jalapeños but they are hotter

I you keep planting the seeds from your own plants, thinning out the seedlings while looking for strong growth & good fruiting characteristics. Selecting plants with the best fruit heat, You can remove most of the modifications made to the seed in 3-4 seasons.
Making your own *heritage seed is done this way.... Good seed selection over a few generations.
Oh be it so simple. In theory yes, but there are so many variables. If the fruit is a very stable hybrid it is near impossible to go back.
I don't know if the salsa market in Ireland is indicative of the heat of your average jalapeno, no offense.
