Well, either something is done or isn't done. A light switch can be on or off. Like other comments have mentioned, Obi-Wan is saying Anakin looking at it like "if you're not with me, then you're my enemy" where there's a galaxy full of nuance involved is dealing in absolutes. Obviously Obi-Wan cannot bring himself to join Anakin, but I don't think he ever thought of him as an enemy. He just felt bad that he had failed him as his master. Not mad, just disappointed vibes.

He knows that Anakin has turned to the Dark Side. But the point is, he is not actually making a conclusion of "Either it's this extreme or that extreme. No other options." So what he said is true, from a certain point of view.
For clearance Anakin says ”you‘re either with me or against me” which is an absolute. Obi Wans Full reply is ”only a Sith deals in absolute,I will do what I must” which means has to act if Anakin decides to attack,making it clear he leaves a choice to make.

I'd argue that Hayden nails the whole being childish thing. He really does sound immature and a fool (arrogant) thinking he can do all he thinks he can. Darth Vader from the originals is the intellectual we all love because its set 19 years afterward. He's matured and isn't as childish as Anakin here. We see it perfectly during the Obi-Wan/Vader duel in New Hope. While Hayden is far from perfect in terms of acting, I really didn't want him to act like Vader so I think it fits at least somewhat

I'll never forget this scene in theaters. This was the scene we had been waiting the last 6 years for.....and boy it didn't disappoint. Just remember it being dead silent during this scene and was the first time a lightsaber fight started in the prequels where no one in the theaters clapped at all just because everyone knew this wasn't a scene to clap for. As much as we want to rip on the prequels, this scene was just perfect.
