Bread and Butter Pickles

- 10 c. sliced pickling cucumbers
4 medium onions, sliced thinly
½ c. pickling salt*
3 c. white vinegar
2 c. sugar
2 tbsp. mustard seeds
1 tsp. celery seeds
1 tsp. ground turmeric
Wash and thinly slice cucumbers. Place them in a glass or stainless steel bowl with onions and salt. Cover with cold water and let stand at room temperature for 2 hours. Place cucumbers and onions in a colander and rinse well.
In a large stock pot, combine vinegar, sugar, mustard seeds, celery seeds, and turmeric. Bring to a boil, until sugar is dissolved. Add cucumbers and onions. Return to a boil.
Pack vegetables in hot sterilized canning jars, leaving ½ inch headspace
Ladle in hot liquid, leaving ½ inch headspace. Wipe rims of jars and place lids and rings on jars.
Process in boiling water canner for 10 minutes.

The pickles look good. I’ve never seen them done like that. I love your Christmas gift ideas! You need to politely ask for the jars and crates back if they are not reusing them. I have a father dies that either the salsa she gifts out to friends. No one is ever offended and she gets most back.

Thanks for doing Brread & Butter Pickles. I'm not a fan of Dill Pickles & blame Chirpy for that. She used a frozen one as my teether, and it stuck w/ me. lol
Now to the HS stuff... my class had maybe 90-100 if we were lucky. We pretty much knew everyone. I didn't fit in a particular group. I was friends w/ alot of people: farmer's kids, preps, jocks, cheerleaders, etc. I called myself a preppy-hood or hoody-prep, but I was a Goth like Abbie Sciuto on NCIS. Now I'd be called a Graying Goth since I still like that style. ☺️

@@citygirlhomestead... Kris, I also much prefer attending events with fewer people instead of lots of people. Next year will be my 60th high school class reunion. They have them every 5 years, but the first one I ever attended was our 35th. I was glad I went to our 50th, but won't be attending any more because of my poor health. Hubby never attended any of mine with me, and never attended any of his own. So when I went to my reunions, I went with several of the "girls" who were in my class. Up and at em'! When I was younger I used to adore bread and butter pickles. I've not had them in a long long time and this reminds me of that. What year did you graduate? It's hard to believe how long ago we were in high school. I'm still in contact with a couple of girls from school who I adore. I had been in contact with one guy that I rant around with but he passed away just this past year. I didn't know until he'd been gone awhile. I talked to his sister and shared some memories (fun times of causing trouble together). I enjoyed her telling me her stories too. That's the best part of reunions. Not the fancy... but I do know how you feel. I wore a size 5 in high school. What?! LOL I was blind as a bat and refused to wear glasses. I teased my high school friend that she was my seeing eye dog. We still laugh at that.
1984 is when I graduated. I love bread and butter pickles. Sorry about your friend they post when someone from our class dies it's sad there has been quite a few. One was murdered and it's still a unsolved case. Lately cancer and heart attacks guess that follows with the age. I didn't like to wear glasses anymore than I do now lol
@@citygirlhomestead I think two girls from my class were murdered. One was last seen hitchhiking by the truck stop and the other willingly got into the car with somone who promised her an appointment with a modeling agendy. Both unsolved as far as I know. Sad... By the time 1984 rolled around, *I* had two children. and lived with my at the time husband in WA State. I use the term "My class" lightly. I married in my sophmore year and just count when I *would* have graduated. I went back to school in the late 80's and was a whole lot more into it. LOL

we had to leave early to pick up Toms truck from Sam tire repair but was there over an hour seen a few that I wanted to see and got a few hugs. It was fun. That is awesome you will be able to make some of your own yahoo. Thank you for believing in me my friend.
I tried bread and butter pickles. They aren't for me. They are way to soft. I gave them all to my brother. As for the vinegar messing with the seal, I've only heard a couple people say something like that but, if that was something that regularly happened I don't think any of my relishes or anything that has vinegar in it when its canned would seal. I don't know. I haven't had a problem with using vinegar. YET!!! lol...
I got several cases of different fruits (strawberries, blackberries, grapes, apples and peaches)and I need to do something with them other than throw them in my freezer and they certainly can't stay in my fridge. Have you ever tried Pomana's Pectin? The older I get the more I want to taste the fruit in my jams and jellies instead of just sugar fruit syrup. I can barely taste the strawberries and forget tasting the cherries in jam. Anyway, I know of several folks that swear by that stuff so, I ordered some to give it a try and I was wondering if you've ever given it a go. Let me know friend. I'm curious to find out.
Ya I am not sure that I have really had a problem either but thought I would go to water now when I do meat I do still use vinegar for sure. No have never heard of that pectin I will have to look it up. Let me know what you think. I try not to use pectin unless I have too. I don't like the taste either. that is awesome that you got all those fruits. I have some apples I need to get a few more to make apple pie filling Good luck my friend
@@citygirlhomestead You should try apple pie jam. Its delicious.
Pomona's is supposed to let you can jams and jellies with little or no sugar. When I don't use pectin, I don't like the way my jam sets. I like a more firmer set. Without pectin its a soft set. At least for me it is. I should get mine tomorrow and I'll let you know what I think. There are more steps to it but, if it makes my food taste better and I don't have to use 7 cups of sugar for 1 batch of jam then I'm gonna give it a try.
