CREAM CHEESE In under 30 mins CANT BUY - CAN MAKE

- Making cream cheese at home can be fun and rewarding. It's typically made by curdling milk with an acid, such as vinegar or lemon juice, which causes the milk proteins to separate from the whey. This mixture is then strained to remove the whey, leaving behind a creamy, spreadable cheese.
Adding salt and butter can enhance the flavor and texture of the cream cheese. Salt helps to bring out the natural flavors of the cheese and also acts as a preservative. Butter can add richness and creaminess to the final product, making it even more decadent.
Once you've made your cream cheese, you can enjoy it in a variety of ways. Spread it on bagels, crackers, or toast, use it as a dip for vegetables, or incorporate it into recipes like cheesecake or creamy pasta sauces.
Experimenting with different flavours and seasonings, such as herbs, spices, or even fruit preserves, can also add a unique twist to your homemade cream cheese.

What a great idea! 😂
I pour my curds into a old clean 100% cotton wet pillow case. I tie the pillow case up and hang it up from beams in garage with a clean stainless bucket underneath. Once it has stopped dripping. I take it down andI dived it in to three. I put cracked black pepper in one batch, fine chopped fresh chives in another and the final one has fine lemon peel. I don’t have to worry about keeping it fresh as it’s eaten as fast it made. The family love them.
Thanks for sharing - love the lemon idea. Thank you. Best, Rik
Sounds great, thank you for sharing that!
I've been making cheese like this for YEARS and never knew about the option to convert it to cream cheese. Thanks for the great info!
To return the favor: if you bring that whey to a boil (not a rolling boil but close to it), you'll curdle the remaining proteins and get a smaller second batch of ricotta-like cheese.
Thanks for the tip! Thank you. Best, Rik
Just heard you say it's used as paneer, my earlier question is answered! Thank you. Now, did the Brits teach this to the Indians and they came up with paneer?
Thanks for that 👍
I’m so glad UA-cam allows so many talented chefs a platform we can watch them cook on

I remember when the price of Philadelphia sky rocketed during the cost of living crisis-some very upset shoppers in Asda. Great job Rik!
Its amazing what folks loose it over. Its not cheap here mate. Easy to make though. Thank you. Best, Rik

Lol first world problems
I had no idea that it was that simple.

Me either!😊
I was a bit shocked as well, given the price at the supermarkets I’m going to make this. Thanks for sharing this recipe Rix
@@clairewright8153 You are very welcome, Claire. Hope it helps. Thank you. Best, Rik
Another great video, and one close to my heart! Being from Philadelphia, Cream cheese is almost like a family member, lol. I never knew the exact process, so once again you blew my mind with its simplicity. I've often done the Vinegar/Lemon on heated milk to make Paneer/Queso Fresco, so this is another great whey (😂 couldn't help myself) to use milk when you get a good deal or buy too much. And holy cow, that was the biggest jug of Milk I've ever seen. One important tip for anyone reading this - It must be regular pasteurized whole milk, or fresh milk. Ultra pasteurized milk will not work because it may not curdle do to the the way it was made. and Rik, if you ever write a cookbook, I will be first in line to buy it. And if you do a companion Audio Book, I'd buy that too. Something about your voice, the delivery, your accent...its one of the best voices in all of UA-cam land!
Wow! Thank you very much! I don't think You Tube knows that? Thank you. Best, Rik
Absolutely ultra pasteurized will not work; that includes organic (in the US it's ultra pasteurized). From a quick search: 'Milk that has been ultra-pasteurized does not work well in cheesemaking because the proteins have been destabilized. As a result, the calcium in the milk does not bond properly to make a good curd.'
If there's a local dairy farm you can go get milk from them or have it delivered for cheese making. Here in Colorado there's a couple local dairies that distribute to neighborhoods in metro denver. ❤
Wow these days cream cheese is getting a tad expensive. Thank you Rik❤❤
Tell me about it. Many countries around the world can't afford it but with 5 liters of milk you get more than 800g of fresh cream cheese - what a bargain. Thank you. Best, Rik

Love it with scallions. Here in New York Bagel cafes they flavor it up many ways, like maple and brown sugar, cinnamon, etc. If you don't blend it up, it's rather like ricotta.

I did cream cheese before, it was a tad more complicated because I was told he milk shouldn't get over 60C, and without a termometer it'd meant to watch for the bubles to begin appearing on the edges... but then you made it way easier, just let it boil. And it seems it splits even faster. Nicely done!

Hi rik, another good tutorial on making cream or cottage cheese, was you using 6 pints of whole milk and could you guess the weight ratio you get from the milk to make the cheese.
and could make cream cheese from soya milk.
All in the description - 5 liters - 830g cream cheese. This is whole milk 100% full fat pasteurised. Thank You. Best, Rik
I have to try this at some point. Can this be made into a firmer cheese? Or any other variations you recommend?
Squash it - more water comes out firmer cheese. Thank you. Best, Rik
Hi Rik doo you know if this is suitable to make baked cheesecake. I have a very old recipe and I would like to make it a again Many Thanks if you can let me know
Yes you can! Yes, homemade cream cheese can definitely be used to make a baked cheesecake. In fact, using homemade cream cheese can add a unique, fresh flavour to your cheesecake. However, keep in mind that the texture and moisture content of homemade cream cheese might vary from commercial brands. This variation could affect the consistency and firmness of your cheesecake.
To ensure the best results, make sure your homemade cream cheese is well strained and has a consistency similar to that of commercial cream cheese. If it's too wet, it might make the cheesecake batter too loose, affecting the final texture of the cheesecake. You might need to adjust the amount of cream cheese or other ingredients to achieve the desired texture. Thank you. Best, Rik
@@BackyardChef Dear Rik thank you so much for your reply
Rik, how do you use the whey for baking?
1. Bread Making: Substitute whey for the water or milk in your bread recipes. It can help to activate the yeast and add a slight tanginess, similar to using buttermilk.
2. Pancakes and Waffles: Use whey in place of milk in your batter to add a protein boost and ensure fluffy pancakes or waffles.
3. Muffins and Quick Breads: Replace the liquid in recipes for muffins, banana bread, or other quick breads with whey. This substitution can add a subtle richness and improve the moisture content.
4. Pizza Dough: Use whey instead of water in your pizza dough recipe for a crispier crust and deeper flavour.
5. Cakes: Incorporate whey into cake batters to enhance the cake's texture and add a delicate, milky flavour.
Remember to adjust your recipes slightly if needed, as whey can be more acidic than other liquids, which might affect how other ingredients like baking soda or baking powder react. Best, Rik

Might be a dumb question but single or double cream. 👍
It does matter - it is to put a little creaminess in there and a little moisture to soften it. Thank You. Best, Rik
