Nameless Rose I tested several different pans including ones that my family brought back from Laos and cast iron pans for aebleskiver. I found this nonstick appam patra pan on Amazon and it works great on a glass top stove.
Yes, you can substitute corn starch for tapioca flour. The tapioca flour helps to thicken and helps the cakes be glossy. Please note that substitution of cornstarch to tapioca is 1:2, so use 1 tablespoon of cornstarch in place of 2 tablespoons of tapioca flour.
Hi. If you are using a nonstick pan, you don’t have to grease before each batch and that will help with any grease inconsistencies. This is a recipe that I developed. It can be adapted easily to taste.
Angela S., hi absolutely can use coconut cream. You just have to add water to your coconut cream to thin it down to make it coconut milk. The ratio is up to you for consistency, but I wouldn’t thin it down too much.
