This Melbourne Cafe serves Chile’s Most-Popular Dishes: South American Sushi and Completo Hot Dogs

  • I couldn’t name a single dish eaten regularly in Chile other than an empanada, that is until I visited Gus Vargas at Neruda’s Cafe in Brunswick, Melbourne. I was super surprised that sushi, hot dogs and a version of shepherd’s pie are on the menu, and according to Gus, they’re all traditional dishes! A little digging (and eating) later, I realised they all have a Chilean twist that hints at South America’s melting pot of migration. The fact that Gus is a musician and total cool cat just added to the experience.
