As someone who cooks iguana often, next time, cook it in a pot with liquid. The same way you would make stewed chicken or chicken for gumbo. Grilled iguana can be tough and dry. Great video!!
Ian you are correct about boil the meat prior to cooking it on the grill. My guides in Puerto Rico boiled them prior to putting them on the grill. They seasoned them with something very similar to bbq. I went back three times for more. Super fun shooting and great eating!!!

I've never had alligator but soon as you mentioned frog legs, I was like yea I'd sooo love to ty them. I grew up gigging frogs, yumm! We don't have those in southern Ky, how about a little blue tailed lizard lol.
I like the hot and spicy Walkerswood and i add a little white vinegar and their scotch bonnet hot sauce to the marinade. I might try lime juice instead. Ive only done chicken, but i think marinating it overnight is the key. Should work for iguanas as well.

Looks really fun...but I've heard they taste nasty! Like you said, I'm sure cooking them second time, you would do something different. The bacon and potato soup sounded pretty good. But it's hard to do that when it's a 100° degrees out!! Great video guys!
Ian, man I have been eating them for over 20years, we were working on a job in boca/laud. These guys were catching them constantly by the canals and would grille them up almost every day for lunch. From that point on I made it a point to hunt those things at least once a month and have a bbq

I would try them in slow cooker, after watching crystal, and you eating them. I think cutting them up into 1 inch pieces. I just your opinion. Grilling looks like meat cooks fast. But !! i bet it would be good making it korean bbq sauce style. marinate it first. i usually make mine from scratch. onion garlic ginger soysauce, pear/apple, black pepper, chilis, toasted rice vinegar ,brown sugar, korean chili paste blend it all together in processor then cook it down in pan to a simmer to caramelize it and get it sticky, cook meat, finish it off with toasted seseme oil after cooking.
I followed you from the beginning born and raised in Florida I'm 57 out of all the people I follow I've never seen anyone make Coquina soup when I was young my family would go the beach and get coquinas and make the best soup mad like clam chowder but with coquinas have you ever heard of this.
I think from what I've seen brother, it's gotta be more a low and slow type thing or like you said, crock pot, pressure cooker, then put your sauce on and reverse sear it quick. Id eat it how it was. I live in NY so definitely no iguanas here, but kinda reminded me of squirrel. Which also has to be done low and slow to get the tenderness. Grilled, it gets chewy like the iguana was. I'm no expert at all though. I would have definitely eaten it grilled. I'll eat just about anything. #fat guy haha

Need to boil first. It will soft the meat. It then you can cook it any way you want it. Broil,friedetc.

I used to live in Southern Mexico and Iguanas are plentiful. THey are quite tasty fried in a chile sauce.
