The Process (Chicken Fricasse): - Get Olive Oil in a pan to medium heat - Season the chicken and sear in pan for 2-3min - Keep searing and rotating chicken and add Pancetta - Once chciken is seared on all sides add garlic, mushrooms, bay leaf, rosemary and thyme - Add brandy and flambe, then lower heat to simer 2-3min - Add stock and cook uncovered on a simmer for 10min - Cover and cook a further 15-20min - Remove cooked chicken and garlic, bay leaves and sprigs - Put the sauce on high to reduce (I added arrowroot flour to further thicken it) The Ingredients (Chicken Fricasse): - Olive Oil - 800 chicken pieces - Salt & Pepper - 150g Pancetta - 4 garlic cloves - 150g chestnut mushrooms (Halved) -1 bay leaf - 2 rosemary sprigs - 2 thyme sprigs - 75ml brandy - 450ml chicken stock - Parsley chopped
I am no chef - but the pancetta provides fat and salt to the dish. You could consider using olives, anchovies or a strong tasting mushroom diced up like a king oyster. I've also seen turkey bacon used which might be a closer texture but wont add the flavour
I make this recipe a bit differently by browning flour and making a roux and make homemade noodles instead of potatoes which I got from my German grandmother It's out of this world along with her traditional Sauer Braten recipe. Oh la la.
