The modified knife is used for curved cuts and detail work. It has less metal along the spline of the blade so it is easier to make smooth curved cuts. The standard chip carving knife is used when making straight cuts and gradual curves.
I use the Pattern Transfer Tool to apply the pattern to the wood. It is fast and easy. Go to the My Chip Carving Store (Layout Tools) and watch the short video to see how this tool works.

Pretty amazing... whenever i try to carve wood like that.. it doesnt matter what kind of knife or chisel... if i am pressing hard enough to make that kind of incision, then it becomes almost impossible to control the cut.. especially the straight cut ... always wants to slip and go too far

MyChipCarving it seems like you are using basswood... thats kind of the soapstone of wood... its nice if you get to choose the wood... do your methods work on harder woods like oak?
MyChipCarving I've never carved green or soft wood, and i usually end up going over and over the layout until it is deep enough.. its not as attractive as watching your method... kind of like when you draw over and over with a pen until the line is thick enough

Robert Hageman the harder the wood, the harder it is to get needed depth of cut. I've chip carved mahogany but only once 😁
