Love the chef. Love the technique. Love the outcome. The music? Makes me want to firebomb a village of unarmed refugees.
Bechamel is more of a northern Italian ting....... Most southern italians use mozz, thus confirming the south's culinary superiority over the north ; )
David looks so tired

1."Lasagna" is cooked twice; 2.Italians use Bechamel+Cheese=Mornay sauce (we call Bechamel, but in Italy); 3.Ragu or Bologna sause is half beef mince and half pork mince and a touch of dried mushrooms. Next life, mate. ;-)

When an old Italian lady made me lasagna it was just noodles and tomato sauce, that's it, it was kinda boring, yet simple and clean.
