One Thanksgiving, as we were traveling down to Florida, we stopped at a motel on Tybee Island, GA. All restaurants were closed but I had a camp stove, a can of kippers, some rice, garlic, curry powder, an onion and a pot. I cooked it on the beach. I don't remember what I did, but I remember it was delicious. That's the fun of it.

I RARELY purchase cookbooks but I might have to give this one a go...
Also, David Chang's son is cute as a button! Who wouldn't want to cook for him just to see him light up when the food hits his palate.

If Priya thought working at Bon Ap was a hostile work environment, imagine working in one of Chang's restaurants back in the day. Hypocrit.

I rarely comment, but producers please dont have your host compliment a man for sharing his emotions and being present in his father role -- arent we past that? This is so out of touch-- glorifying a male's effort as if men shouldnt have to balance work and family the way women always do. Also why did we hardly hear anything about Priya? Arent they co authors?

Using your freezer to store food for later use and the microwave to speed up cooking are standard practices for home cooks. It just shows how rarerified an air this celebrity chef lives in, that the basics of home cooking are such a revelation to him that he felt the need to write a book about it. I suspect most home cooks will at least some of what he's talking about already. But if he has some useful tricks or recipes I have not tried before, the book might be worth buying.

I'm thinking this might be aimed at novices? Especially people who finally were forced to contend with the kitchen and cooking for themselves in the pandemic.

@@gemmeldrakes2758 I also think it's aimed at those beginning to cook or at least those afraid of rigid recipe following. It can be helpful to someone not too experienced to build "culinary intuition". While many of the concepts they are presenting here are not novel at all (they admit that these are techniques they learned from their moms/families but have never seen in a cookbook), what's good is these two who have worked in strict kitchens and are successful authors are fighting the stigma against "simple" or "instant" home cooking. Many people/foodies, home cooks included, judge others who buy frozen food, use the microwave heavily, or do food hacks to make things quick----especially with "aspirational" cooking programs and blogs/instagram accounts these days. These are two big names now reminding the (culinary) world to just chill, not be too judgmental, be open to keeping things simple, and not be afraid of intuition and experimentation in the kitchen (especially beginners or those who didn't grow up with a strong cooking environment). :-)

This book is very helpful to my family and me. I can follow a recipe, but I was never taught to cook. Many times when my wife and I have cooked in the past it was a lengthy process that we undertook on the weekends, rarely after a hectic day of work and kids. Or we were relegated to the two go-to simple meals that have gotten somewhat played out. This book has taught us methods to cook a wider variety of dishes relatively simply and quickly and has increased the frequency and quality of our cooking. Maybe it’s not for the experienced home cook, but I think there is a large audience to whom this would be very useful.
