I have a gas grill, a charcoal grill, and a smoker and I still prefer to cook my steaks in a cast iron skillet to get a good sear on my steaks... and hamburgers. A little olive oil and a pat of butter will really help with the sear.
Yeah Steve, me too. The whole idea behind this video was to try to come up with some way to cook outside and somewhat get a good sear on the meat. Not allowed to have charcoal/gas in an apt. so I got one of those electric one's. The other reason was to get the skillet hot then take it outside so I wouldn't smoke up the apt when I put the steak in there. That worked okay. I guess I could call this the reverse sear method. Some of ya'll saying there's no point to finish off the steak w/ the hot cast iron are wrong. The point is to prevent lingering odors filling your home! As a True American™ who practically lives on USDA Prime ribeye from Costco and Kirkland Bacon, I can tell ya it sucks when you hit the sack after a great meal and a night of watching Duck Dynasty reruns and the whole bedroom reeks of grease. Cooking it outside resolves much of that issue, even if you do have to take the extra step to preheat an iron skillet to finish the steak off.
I was using my table top electric grill in the garage in winter, but discovered it was leaving a grimy grease film on the car windows; so I’m disinclined to use in the kitchen since I don’t want grease all over the cabinets. If anyone has an idea how to manage this, I’d be grateful to know it.
Wow! I haven't heard of that happening. I've only had one tabletop electric in the past, but the only grease issue I had was of course on the grill, but also around the grill on the counter top. Sorry couldn't be of more help. Thanks for watching.
Thanks so much for watching and subscribing. As you might know it is impossible to cook a steak properly on an electric grill. It just doesn't get hot enough. The sear goes along way in getting the great flavor of the steak. This was just an alternative way to still get outside and cook quality steak if you live in an apartment and can't use a gas or charcoal grill I see your point though.
Well - yes, you can get a char w/ an electric grill but it takes a pretty damn expensive electric grill. If you're interested, Philips Smoke-less -- you can use it in the house, if you want to use it outside, just be sure to bring it in when you're done (and don't use it in the rain!) It's an excellent grill - the grill top gets to a little over 400 degrees F. It is $300 though. Another good electric grill is the one from Weber. It also gets very hot.
Do you have a broiler in your oven? I use a cast iron skillet like you but start off on the stove top. I set the cast iron pan onto the stove and let it sit above a high flame for 5 minutes.. While the pan heats up i turn on the broiler & season both sides of the steak with kosher salt and fresh cracked pepper. Then i put the steak in and let that sucker sizzle for about 2 minutes . Then i take the skillet off the stove and place it under the broiler for 10 minutes. There is no need to turn the steak as the pan remains red hot and will cook from both sides at the same time. The char is amazing. After the steak is done cooking i cut it into serving size pieces and then put it back in the pan with some butter on the stove top for about 30 seconds mixing the steak into the juices. If you decide to try this technique let me know how it comes out. Thank you for your video. I'm getting my new indoor electric grill tomorrow and always on the lookout for new recipes and techniques. The four most tender cuts of beef are tenderloin (filet mignon), top loin, t-bone and porterhouse, all of which can be pricy, especially these days. Kroger has 6 ounce bacon wrapped filet mignon that is packaged around $6. I buy it all the time and it’s really good. You can also buy the cheaper tougher cuts of beef and marinate them to make them tender. Lime juice is a great beef tenderizer, but don’t marinate in lime juice longer than 2 hours. Hope this helps. I'm very familiar with your electric grill but I'm looking to buy the George Foreman 15-Serving Indoor Outdoor electric grill because it gets up to 600 degrees of heat so I'm not sure if I can follow your steak method on that grill

The Blackstone hands down! I have both the regular and electric Blackstone, but I can only use the electric on my apt balcony. With the E Series, you get the fun of cooking on a flattop while being able to cook just about anything on it. It has a temp dial so you can regulate the temp easily. And the best thing.....you wouldn't believe how easy this thing cleans up. I never have to use soap. It's so non-stick! There are a few things though you can't do to keep the non-stick coating from damage. No big deal. Just a couple things, use silicone spatulas and regular Dawn dishwashing liquid, if at all. Don't use any of the super grease powered dish liquids out there cuz it's not necessary. Even Dawn Power wash will damage the surface. Other than that, you would love this griddle. There are so many UA-cam vids out there about its use and cleaning etc. You would not be sorry getting that. And no I don't work for Blackstone. lol. Have a good day!
I have the 17 regular Blackstone and the 17 E Series Electric Blackstone. I don't use the regular much unless I go camping because I can't use propane at the apts. where I live. I can have the electric though. I cook on it regularly. I have two E Series, one on my balcony and one in my kitchen.
Well. It depends whether it's cold outside, warm or hot. I tested mine in the summer with an insta-read thermometer and it registered 525 after letting it warmup. Plenty to cook a steak, but as soon as you open the lid alot of heat is lost. So it won't maintain a solid temp. That's why I did this steak the way I did. Nonetheless, it will still cook steak, but it won't be as pretty, so to speak, as on a charcoal or gas grill. However, I've since gotten rid of that and got something that does everything a charcoal or gas grill will do except for that smoky taste. I got the Blackstone E Series electric griddle and it does keep good temp to sear and cook a steak. Checkout that video on my channel. I was amazed! And this thing cleans up like nothing else. Might as well pan fry sear first then bake like chefs do in many restaurants. Not really a point to use a grill regardless of gas/electric if you are just going to use it as an oven. Pretty sure you have an oven in your kitchen.
Alex, you're right, traditionally, a restaurant method of cooking steak involved searing over incredibly high heat, then transferring to an oven to finish on a more gentle heat until done. The reverse sear method pretty much just flips the order, and involves first cooking the meat on a very low heat before searing the outside on a super hot surface. The basic idea is that with reverse sear, you have greater control because you’re making sure the high heat only comes into play right at the end and that the steak inside will be perfect. It does take a bit longer to do it this but the idea for me was to just get outside, drink some beer and try this method on an electric grill rather than to let that thing just sit out there getting no use at all. Think I'll think to cast into on the range/oven. Or just disregard the condo rules and use a gas grill that should be easy enough to keep out of sight from management.
Yeah. I hear ya. Kinda of hard to hide it where my apt is located. They do allow charcoal grills as long as it is not within 10 of what they term combustible construction". I'm sure your lease contract may read the same. They are pretty much all the same. But, my Weber is in the garage and a pain to dig out and drag down to where I could do it. Oh well. lol. Dude! LOL. I was talking to a guy and here's what he does. He lives in an apt and too can't use charcoal/gas grills. So, he says he has one of those small butane counter top stoves that uses those aerosol can like canisters, which is open flame. He places it on top of the electric grill grates and fires it up and cooks his steak etc. in a very hot cast iron skillet. Hahaha

Thanks Rob for watching and for your question. This is a technique used by many steak houses. And we all know how great steaks come out there. Many restaurants keep steaks frozen until ordered to avoid spoilage, waste and /or unsafe dropping of the steak temps for food safety. The steak house crust is usually perfect and many home grillers have trouble achieving that for several reasons. One being the size of the steak, which are usually thinner cuts cuz the thicker steaks are more expensive . In order to get that great crust the steak needs to be cooked at higher temps and stay on the grill surface longer, but many times the steak ends up over cooked on the inside. Grilling frozen steaks prevents that from happening, thus allowing the outside to remain on the grill longer for that great crust without over cooking the center. Hopes this helps explain it. Respectfully, why show a method that focuses on cast iron for the seat when you have a grill? I’m a fan of cast iron for steaks, but you have a grill there! Why not seat at high temp on the grill, turn the grill down and then let it come up to temp?
I understand and thanks for watching. The reason is that getting a really good sear with most electric grills is difficult. It simply doesn't get hot enough especially in cooler months. However, since making that video I now use a Blackstone E Series griddle, which can reach temps close to 500F. I'll send you that video wwhen I can locate it. Thanks again.
