Ash I live in in Trinidad, that's in the Caribbean and my grandmother taught me to greese my hand with a little oil before peeling the green plantain or banana, the sticky coat or stain will not stay on. We cook plantain when it's half ripe or fully ripe. First time seeing or heard of matooke. We have lots of avocados/zabocas but ours are much larger.
Matooke is mostly found in Uganda...and differently prepared all using banana leaves and banana stem banana fibres check. Thats y Uganda is called banana republic coz we have many spices of banana
In 🇺🇬🇺🇬 🇺🇬 we just estimate time en we also use our fingers plus minds to measure salt. So we don't need calculations 🤣🤣 Arsh u really a true 👍Ugandan woman😄🥰💖💃💃

Hi Ash.....some advice on how to cook that green plantain. My Tanzania friend taught me. You cut them like cassava katogo. Then cook them several time and pour out the water like 3 time. Then put peanut and cook together on low fire. It will taste nice exactly like matooke. Try it next time enjoy

Thats plantain. I have never seen anyone boil green plantain. In Jamaica we cook only ripe plantains. Green plantain is usually lightly salted and fried as a staple or as chips. It is also used to make porridge. There is an easier way to peel plantains or bananas. Cut both ends, slit the sides and use your hands to lift it out of the peels. No sweat. To avoid your hands being stained, rub cooking oil on your hands and knife before peeling.
I have never seen anyone peeled green plantain like this. My mom would slap me if I do it this way. Normally in Jamaica 🇯🇲we cut the top and bottom and a long slit on the outer side then open it from there with you hands

We only eat ripe plantain(Gonja) but matooke has to be unripe and we peel it like this. We have a lot of plantain species in Uganda that's why we are reffered to as the banana Republic
