    About Me:
    Chef Keith’s exciting take on Indian cuisine uses his passion for the spices and flavors of the Indian subcontinent with fresh, seasonal ingredients from New England farms to create a dining experience like no other.
    Years ago, he dipped a charred piece of bread into a rich gravy that soaked each crumb like a sponge. He raised it to his mouth and closed his eyes, and that is where his journey began.
    Chef Keith is a 5x author, restauranteur, and public speaker who grew up in a small city in New Hampshire in the United States. Growing up in kitchens, he learned how to cook from many amazing western chefs. Each chef would impart the knowledge passed down to them by their mentors. It wasn’t until much later in life that he would try his first bite of Indian food. He began learning under an Indian home cook and went on to study with food archeologists and historians from across India.

    The main difference i see between indian and srilankan food is that srilankan food doesn't usually have that tomato ginger garlic etc etc blend into a base curry or paste to make a curry, in SL food the meat or veggies take the main stage even in curries like the cran curry the crab meat shines above the curry.in indian food the sauce aka curry shines more than the base veggies or meat. I think its due to the introduction of tomatoes and other things through colonial influences. You dont see that easily in SL food or indian food recipes that are unchanged over time. The lesser effect of this influence is the main differentiation for me between SL and indian food. Also the diary heavy dishes in indian food that came as a result of influences through persian and mughal cuisines its absent in SL food.but the closes cuisines in india to SL are Kerala, tamilnadu and west bengal.maybe necause historically the peoples from these regions migrated and trades between them. Also the tamil ethnicity being present in both SL and Tamilnadu. And yeah as he says SL food is more spiced sometimes even than southern indian food. Ultimately to put in one sentence SL food is more rustic with the bases shining while indian food its the spices and the sauce shining. Also indian food is more influenced by techniques from colonials and Mughals while SL food is more influenced by east asian cuisines.

    Most banana leaf meals (not just in Kerala) have the variety of components that the chef is talking about. I think his experience of Indian food is restricted to restaurant food (North-Indian-forward to suit the spice-intolorent palate of westerners). How many components go into a meal may depend on the occasion and the economic means available to a family.

    Indian cuisine is incredibly diverse, with the taste of the same dish varying every 50 kilometers as you travel across the country.
    Many people outside of India often associate Indian food with dishes like butter chicken and naan, but as someone who grew up in southern India, I can attest that these were not part of my diet for the first 23 years of my life.
    The term "curry" is overly broad and does a disservice to the rich variety of foods found in the Indian subcontinent.
    Southern Indian cuisine shares similarities with Sri Lankan food, likely due to geographical proximity and the influence of local ingredients and traditions.

    That’s so informative @keithsarasin. By the way I am from South India 🇮🇳 and visited Sri Lanka 🇱🇰 recently. Flavours are similar to ours . Authentic dishes like coconut roti, Rice and curry and many dishes we loved 🥰. Healthy and subtle plate 👌

    In my opinion, "Indian Food" is very hard to define because it's so different from region to region. I grew up in the rural South India in the 90s, I didn't even taste naan till I moved to the city for my college.
    In my opinion, what is unique about Sri Lankan food is the use of sambal. It is kinda chutney, but not a chutney. Also, the Lankan curries are a lot thicker and do not use a lot of tomatoes, unlike the "Indian Curries" that are popular in the West.

    Indian cuisine is vast every 20 to 30km taste chnges food chnges for example sambhar Udupi sambar is different than kerela sambar kerela sambhar different from tamilnadu sambhar and andhra sambhar...dal se different in every states..rice is different in every state..cookind style is different..maharshtian mostly use dry coconut on their food where as down south we use fresh coconut on our food..cooking oil is different in all regions ...if you see biryani or pulao hyderabadi biryani is different from Kerala biryani whereas banglore benne biryani is different from kolkata biryani or lucknowi biryani and kashmiri biryani is different or pulav is different......if u start learning indian cuisine may be it will take 20 plus years to master indian cuisine....wereas northeast cuisine is so vast not explored yet by many chefs

    U can visit south India u can see variety of different foods temples heritage and culture especially Kerala and Tamil Nadu it's amazing Kerala, munnar, kochi , wayanad, Kodaikanal, Ooty, coimbatore, manglore, Gokarna, Coorg, Bangalore, Mysore, Alleppey, Udupi the world heritage site tanjavur bruhadeeshwara temple tamilnadu and palani temple tamilnadu here the god idol is made up of different types of ayurvedic medicines when we pour any liquid on idol it absorbs the medicinal properties and we drink the liquid we don't get any diseses

    Most Indian curries taste spicy because we don't eat curries by themselves it's either eaten with rice or sometype of bread so that the flavour actually balances out we mixed with rice to a level of palatable but most foreigners eat curries by themselves or add Too much curries per a byte of Rpyi or Naan and complain that it's too spicy 😂😂😂

    Seriously commenting Indian food as butter chicken and garlic naan is the only 2 dishes on India I'm totally offended, its like saying I read the book of the cover and I know the story. No one in the world knows about Indian culinary, every 10 kilometers the dish changes in flavor all over the country. And keith I don't think you have tasted eesal pootu (eesal is the ants that fly) with highest rich protein it is made into pootu which u can get in Tamilnadu villages. Egg Kalaky is half boiled omelette which is poured on to with chicken or mutton curry eaten from frying pan while its hot. Seriously you need to go out of Mumbai and witness Indian food. Mumbai is just a tiniest part of Indian culinary of taste.

      And also try Andhra food, nobody knows fo Uluvacharu, Gongura Chutney, gutthi vankaya ( stuffed Brinjal ) different types of Podi's , I never ever seen that many kind of Podi's and Leafy vegetable curries in a restaurant or any home anywhere or any other Thalis except for Andhra food that I ate at Subbaiah gari hotel in HYDERABAD and entirely Vegetarian, every one eats only biryani when they visit Hyderabad but just try Proper Telugu food, even meat options very good , I'm a Tamil person living in Hyderabad even other Indians come Hyderabad the only eat Biryani, but I prefer Telugu vegetarian food..

      I too haven't seen anybody commenting like Sri Lankan food being more vibrant than Indian food! In fact, even in the entire South India, they serve a variety of components on a banana leaf platter, which obviously means "vibrant"!!

      @@EagleOverTheSea Maybe so...or it could be that he wants to somehow propel and advertise Sri Lankan cuisine to popularity...at par with Indian cuisine, which he in his heart knows isn't the case. No problem in showing off patriotism, but to call Indian cuisine as less vibrant than the Sri Lankan cuisine doesn't hold water!
