Feta Pasta but Vegan - Quick and Easy Weeknight Meal

  • Hello my friends and welcome back to another video! I know I'm a few years late to the feta pasta game but I've gone vegan since this recipe came out and wanted to put my own spin on it
    I know there are countless versions of this out here but this is my take on this quick and easy pasta. It was absolutely delicious and I hope you give it a try!

    What you'll need:
    One block of vegan feta
    16 oz pasta of choice
    2 pints of cherry tomatoes. ( I ended up using about 400 g of cherry tomatoes from my garden just because that's what I had on hand but I definitely would recommend using a little bit more as the two pints)
    One cup of frozen peas is optional but recommended
    2-6 cloves of garlic depending on your taste preferences
    Salt and pepper to taste at least one teaspoon salt and 1/4 teaspoon pepper
    One teaspoon of oregano or more to taste
    Optional sprinkle of red pepper flakes
    3 to 6 tablespoons of extra virgin olive oil depending on taste I used about 4 tablespoons
    1/2 cup to 1 cup reserved pasta water better to have more than not enough
    An optional sprinkling of garlic salt
    A handful of fresh basil ripped and stirred in at the end for extra seasoning
    How to make it:
    Preheat oven to 400° f
    In a 9 x 13 baking dish add vegan feta, washed tomatoes, and drizzle with olive oil. Sprinkle on seasonings and bake in a preheated oven for 20 to 25 minutes or until the cheese is melted and the tomatoes have burst.
    Meanwhile, cook your pasta. While the oven is preheating, set a large pot to boil with about one tablespoon of salt. Once the water is ready at 16 oz of desired pasta and cook until al dente just follow the package instructions. Don't forget to reserve some pasta water.
    Once the pasta has about 4-5 minutes left of cooking time add in one cup of frozen peas and stir.
    Once the tomatoes and feta are cooked and the pasta is the tomatoes and feta in the pan mix together until combined. And the pasta and stir until coated. Add about half a cup of pasta water or more if needed to help the mixture stick to the pasta. Top off with a sprinkling of garlic salt and fresh basil and enjoy!
