Build Your Own BAGELS From Scratch

1. I may suffer from brain damage.
2. I may be poor.
3. Homemade bagels made the way you like: Priceless. (minus the cost of everything)
Flour. Salt. Sugar. Water. Yeast. That's all you need. (plus everything else)
Bagels: (makes 8)
500g Bread Flour
9g Instant Yeast
10g Salt
20g Sugar
Optional: Add herbs/spices of choice, ~1 tsp of each
Mix
300ml Warm (90-100F) Water
Knead ~8 minutes until gluten develops
Proof and let rise (until double) 1-2hr or overnight in the fridge
Shape into 8 balls
Shape into bagel
Cover while prepping poaching water and pre-heat oven to 425F
Poaching Water:
2L Water
1/4 Cup Honey
1 TBSP Baking Soda
Boil bagels 1 min per side
To bake:
Coat baking sheet with grease+corn meal
Egg wash bagels
Optional: Top with whatever you want
Bake @ 425F
20-25 minutes
Until internal temp ~200F+
Let cool to room temp before cutting
