In Trinidad we use splitpeas powder. It is mix with some tumeric powder and water to form a besan. Then small semi balls are made or it can be put into a jarna to fry in oil. Then grind in mill. Then put elychee, ginger, sugar syrup and mix with condensed milk. Then use little ghee in hand to roll small balls. There you get laddu made with yellow split peas grains.
Your recipe came out really well and it is very easy to do. Boondi ladu is so hard to make. Except I used my judgement not to add all the vada powder to the sugar syrup. So was left behind few vadas which are tasty too. Thank you.
Some one has replied, dont use Besan flour as it will come out to be Besan laddu. As Besan is a flour and not ground where as this is coarse if ground.
Probably maple syrup, agave syrup or honey. Heat it in the pan as required and you might not require to add the 1 cup water. But the taste will be different. I'm not getting what you are asking, but if you are talking about "fir sugar", the green colored sugar made from fir needles, you shouldn't add it since it'll change both the flavor and color. And fir sugar contains sugar anyway so be mindful of that. Hope this helps!

What's the shelf life of this laddu?
Looks like a week max! It’s preserved already in syrup but not enough to keep them mist for long.
Can we grind chickpeas without soaking, then roast with ghee and the rest same? Will that work?
