I upped the oopa by adding a little soy and worchshire. It literally came out amazing. Beef was so tender.

Omg, this looks so freaking good. I'm making it for dinner but I don't know anything about cooking beef and I've been religiously cooking homemade since I was 14, now 32! It's always scared me and most of these stroganoff recipes don't slow cook the meat and I'm so worried about it being tough and ruining it. I can't afford a super high quality cut of beef these days. Thank you for another great recipe!
There are three important factors when stewing meats to keep them tender and juicy. The first is to get a nice sear in the first step- tends to create a protective layer that prevents juices from coming out. Also adds nice caramelised flavour to the stew. Secondly is to have the heat super low- after the meat and stock boils, lower the heat immediately until it’s just barely bubbling. The third is to make sure that all the meat is submerged. Any pieces that aren’t submerged for an extended period of time are more likely to dry out. Hope this helps!

GREAT
I start with braised slow roasted chuck roast. I cook till 135 F. I cool . Then I have beef broth 😀
After beef is cool, I cut into small pieces. I set aside.
The beef broth plus butter are placed in a sauce pan the size I need for the amount of people at the dinner. This is set to slow simmer.
In a frying/saute pan are the veggies:
How much onion, celery, and mushrooms depends on the number eating. I cook them till soft not mush. Then add garlic paste.
Addt to simmering beef/butter. Turn down to very low. Now add the sour cream (I may or may not add mustard). After mixed well, I taste. I like a good soy sauce added.

Curious why the extra step with the sour cream being mixed? Would it not taste the same if you just put sour scream directly in pot and mixed it in there?
It will curdle when adding to the pot that's very hot. I have just watched another video on this same recipe which the vlogger explains.

I used heavy cream instead of sour cream all the time for soup recipes. it is very watery though and won't thicken it up in the same way so i add one diced potato to compensate.

your choice. 4 to 5 hrs on high, or 6-8 hrs on low. Depends on how much meat you have., and if you want to eat sooner than later. Also, some crockpots are much hotter than others. Most youtube recipes tend to overcook meat imo.

Sorry , still cooking this today in the slow cooker and all I can taste is mustard and flour. I cooked the flour out and even so it is not nice. Have added some honey and am going to add some Worcestershire sauce for flavour as it is tasteless. What am I doing wrong.

I dont usually enjoy stroganoff. But i made recipe tins regular stroganoff recipe(no slow cooking), its very similar to this. Its now one of my fave meals to cook. I serve it with German spaetzle.
@@bearclaus2676same, I do the Recipetin pan fried one nearly every week, it's delicious and I double the sauce to serve with tagliatelle pasta, sometimes we omit the beef and double the mushrooms for a lighter meal, but this also looks good.
There is a massive difference between searing meat and deglazing the bottom of the pan to burning the bottom of the pan. That was burnt.

I don’t understand why scoop some sauce out, put sour cream in it and put it back to the whole pot instead of just directly put some sour cream in the pot
Because you can't vigorously mix the sour cream in that much hot broth at once. The sour cream will break and you are left with white specks everywhere instead of a solid color. Also, you don't want to whisk in the crockpot, otherwise you inadvertently break down the cubes of beef. They are very delicate and fall apart easily.

Yes. Also, use more than salt and pepper. Process works, but this is incredibly bland.

Any chef knows you NEVER cook mustard. You put it in at the end- OFF HEAT- along with a dollop of sour cream. Who are these people?
no way!! mustard is awesome in some recipes in some capacity. i respectfully disagree.
Did this perfectly (I’m pretty good in the kitchen). This was bland as hell literally zero taste the broth makes it taste like straight water and all you taste is a piece of dry steak.
If you brown the meat well to get lots of tasty fond on the bottom of the pan & brown the onions really well too you should get lots of flavour. You can also reduce the stock so it's richer in flavour or maybe the stock you you used, wasn't the best? Also if you cook the meet long and slow, it should be really tender/falling apart.
