    Jun Nakajima, CHEF AND FOUNDER
    Raised in a restaurant household, Jun's love for food began at a very early age. His parents have owned and operated a Japanese restaurant for over 30 years where he practiced and honed his culinary skills.
    Somewhat forced upon, he was taught the art of sushi making in his teenage years. He quickly fell in love not only with the art but the endless opportunities that came with it.
    He has traveled around the globe to try different styles of sushi, most importantly to Japan.
    After college, Jun had taken an opportunity to live in the motherland of sushi, working for something completely outside the culinary field. In those two years his appreciation of the culture, people, history and food deepened.
    He became addicted to the food scene and found himself traveling from one end of the island to the other, eating and drinking some of the best foods and drinks he's ever had. This experience became the seed which eventually bloomed to become The Sushi Man.

    the vegetarian or the California roll sounds great that's the basic Sushi technique that I want to learn I seen all this fancy stuff and everything else the only thing that I got was a sushi mat.

    My secret ingredient for California roll is a lot mayonnaise.
    I was a sushi chef for 3 years.
    They love my California rolls.

    Maybe he talks a lot, but what he says is relevant. So often people who go on and on talk about stuff that isn't relevant, like, gee, why they like this or that.... Or what kind of morning they had? Or anything else that pops into their heads? Not this guy. All relevant to what you are trying to do. At least for me, that his.

      Hi Kbmshop, I bought it at a local Asian market. And there's no brand or logo under the plate so can't tell where it's originally from. Sorry, not much help.

    You are great when I flip the nori rice falls why ? And do we need to wet nori

      Hey Jawaria, wetting the nori will make it too soggy so make sure to keep it dry. Your rice may be falling off because it's too dry or just doesn't have the right consistency.     Just came across your channel watched every video! I love this series, could you make a video on edamame ? Our other favorite thing to order but not everyone makes them is baked mussels😅
    Also I’m terrified of buying raw fish that I’m not planning to cook… what are the best stores?

      Thanks Vitalina, glad you enjoyed the videos! As for buying raw fish, a lot of it will depend on your location. Obviously if you're by the coast then you'll have more access to fresh seafood. Regardless though, try to find a reputable market that has good reviews, a simple Google or Yelp check can tell you a lot. And get to the know the fishmonger, a good market should have knowledgeable and experienced staff that can guide you to what is fresh and is able to be consumed raw. You can also check out a couple online seafood vendors that I've heard good things about. I haven't tried either one of them personally but one is Riviera Seafood Club and the other is Catalina Offshore. Hope that helps!

    Does your book contain any info on how to tame the flavor of the nori? Whenever I make my own sushi it's unbearable because it's so strong and I gag. Whenever I get sushi from a restaurant it's fine.

      The flavor of the nori comes down to the brand and type you're using. I typically like to use Yamamotoyama but you can ask the chef at the restaurant and see what type they use. Hope that helps!

    How do I keep the Nori from showing on the bottom of the roll. It's not much but it annoys me 😂

      Typically when you use the makisu it'll show but not so much when you roll it by hand. Check out this video where I show you how to roll inside out rolls in three different ways ua-cam.com/video/R6dqQIn8SNk/v-deo.html. The last method is the one you're looking for. Hope that helps!

    I follow your video carefully step by step but I always fail at the end when I cut the roll. I can't cut it so easily and everything fall apart. Any suggestions?

      Hi Mariachristinatkm, cutting the roll clean can be a bit tricky. Most importantly you need a sharp knife and also have it wet right before you cut. If that still doesn't work, try wrapping the roll with plastic wrap and then cut it. The plastic wrap should help keep the roll intact. Hope that helps!

      The roll cutting knife should be clean and you can apply 2/3 drop of water on the knife to make it easier to cut.

      We usually get it from our vendor or I've gotten it before from a local Asian market too. I prefer the white one versus the pink one since some brands will add red dye into it in order to get that pink color. Amazon also sells some as well. Hope that helps!

      Hi Miloterra, how to cut fish obviously depends on what type of fish and what sushi you're using it for (nigiri, rolls, sashimi, etc.). It's not one I can really explain here but would be a good video to make in the future. I also go over it in my book if you're interested.

    I met a S American native Chao (sonic garden?)(ha aventura) zm making 🍣, teaching hx (avo cation, advocate) 2 mx California sushi rolls🌞. I like chai tea too, spicy. Spices each + 12 nutrient to yor food, m m good❤ chao? Ty4 Lrg... Oh tuna is good, only time ate raw, it was yr really good! Rjo
