Recipe for Fresh Pasta (Linguine)
Ingredients
1. Pasta- any will do (6-8 servings or one pack)
2. Tomatoes- Cherry or Grape is the best (2 Cups of Tomatoes)
3. Fresh Basil (1 Handful)
4. Fresh Crushed Garlic (2-3 cloves)
5. Extra Virgin Olive Oil- Highest Quality (1 Cup or more if you want)
6. Fresh Mozzarella (1 Cup)
7. Salt and Pepper
Mix all the ingredients into a non metal dish (except pasta and mozzarella) and let sit for 2-8 hours before serving. When ready to serve, boil your pasta. Make sure to drain the pasta right when it is Al dente (or before it is fully cooked). Put the mozzarella into the tomato mixture and stir. Pour the pasta into the mixture and stir. If you salt the pasta water you don't have to use so much salt outside of it.

Finally few weeks after I watched this video I made this pasta. I let tomato mixture sit for 9 hrs. Instead of salt I put soy souse and added tea spoon of vinegar. When I tasted first bite I thought I was in heaven!!!!!! It was so goooood!! Thank you Benjiman!!!

Learn how to season to your taste. Simple. This gives a nice framework but you need to adjust to what works for you. Keep trying to learn and grow.

Here with an update! It was INSANELY delicious! Everyone in my house loved it, wanted more, and said I could make it again! The yellow tomatoes were a wonderful addition. We served it with roasted garlic sourdough bread from our farmer's market :) Thank you so much Benji!
