Looks easy but I do not know where to get Cilantro also Kaffir Lime - leaves and fruits. Must look around or maybe check ebay. By the way, I have a mortar. Question: Why do you use dried chili and not fresh chili? Other point: When I use chili I remove the seeds. This improves the taste, as for me. What is your opinion?
You can use lime skin instead and just skip the leaves but put a little bit more of lime skin. I use dried chilies because of the color it gives. Also, it gives the paste a really good smell. And finally, you can keep the paste longer when you use dried chilies (but you can also add some fresh chilies for a stronger taste) I usually don't remove the seeds because it gives a little bit more spiciness 😋
