To prepare the baguette we will need:
- 2 eggs,
- 50g of refined olive oil,
- 40g refined coconut oil,
- 50g albumin (egg white),
- 50g of 15% sour cream,
- 80g almond flour,
- 1 tbsp apple cider vinegar,
- 1 tbsp erythritol with stevia,
- 1 stl leavening agent,
- 1/2 salt
- 1/2 xanthan gum (thickener),
- sesame seeds.
1. Break 2 eggs into a bowl. Add 50g refined olive oil and 40g refined coconut oil. Beat with a whisk.
2. Then add 50g of albumin (egg white). Mix well.
3. Add 50g 15% sour cream, 80g almond flour, 1 tbsp apple cider vinegar, 1 tbsp erythritol with stevia, 1 tbsp baking powder, 1/2 tsp salt. Mix well.
4. Add 1/2 tsp xanthan gum (thickener). Mix well.
5. Leave the dough to swell for 15 minutes.
6. Place the dough in a silicone baking dish.
7. Sprinkle sesame seeds on top.
8. Bake for 20 minutes at 160℃/320℉.
9. While the baguette is baking, let's make the strawberry jam. Peel washed strawberries from the stalks.
10. Add 1/2 tsp xanthan gum (thickener). Whip in a blender.
11. Peel and slice the avocado.
12. It made a delicious baguette.
13. Making strawberry jam sandwiches.
14. Making sun-dried tomato and avocado sandwiches.
A bit of oiled parchment paper in the bottom of that mold would fix it right up. looks delicious!
