@Yuethefox the problem with baking with Splenda is that the Splenda doesn't react or caramelize. If you need the sugar to caramelize then you can't use Splenda. If it's just for flavor then you can. You'd have to experiment. It might work on these particular cookies.

@tippylovesdaniel it smells like black licorice. it's a spice on the baking or spice aisle.

Biscochitos is the state cookie of New Mexico, that's how popular it is. Also I was always taught to pronounce it Bis-ko-hee-toes. My moms side of the family is from New Mexico and my brother always bragged that our grandma had the best. I don't know, everyone has their own recipe.

@JustNess78 i have already shot the video and can honestly say it came out great. Jack Jr. has been using the jam on his waffles in the mornings.

@Jennifer8Music yes. use a citrus juice if you can.

@FrailShiver We put all dry ingredients in the mixer. just add slowly and it should all be perfect.

@tomlinid here is what you do. Next week there will be sugar added. Try it without any sugar or half the sugar I use in the video and see if that rocks for you. I haven't tried it with less sugar yet. One thing to remember is to use a little jam on something. Your supposed to spread it thin. Most people glop it on.

@Kiarnis I can't explain it, but these cookies must have milk or coffee. They are really screaming for moisture. LOL. I was dying for a glass of cold milk on the set.

Instead of the 1 3/4 of regular sugar could I use splenda? or is that a big no-no?

@P4pst99 I have already decided not to take on another sponsor because I didn't feel right having it on the show. It took too much from the show. I loved empire covers but I will only be promoting my sauces and nothing else. Thanks for writing.

is the oven temperature in Farenheit or kelvin?
using 375 seems a bit too much for celcius(what we europeans use)

Check New Mexico Magazines website for 'authentic' biscos. Traditionally, as un-healthy as it may be, 'lard' is used to keep them moist. My gran would also add brandy or whiskey. Excellent 'Christmas morning' cookies with coffee!!!

Hey Joe! Are these biscohitos ''related'' to ''Berlin crowns?''. It's popular in Norway for Christmas (Berlinerkranser) and we make them in a similar way and use pearlsugar. Never seen cinnamon been used before, will definately try that!

  • @FrailShiver

6:57 Did you put all the dry ingredients in the blender? Or just stop adding when the dough looked 'right'?

Orange juice? Butter? Fish shape? Im from New Mexico an never had anything like that. The cookie is popular during Xmas time but If your looking to make it get the recipe from The New Mexico state website. The seed favor is off set by the sugar and cinnamon. It doesnt taste like licorice. When you use the cookie cutter on your rolled out dough only dip the top side of it and bake.

Using Lard is better then using the butter, it gives the cookies a better melt in your mouth consistency. Thats the New Mexico way

@Karroo96 2 cups of sugar, 2 table spoons of bright/light syrup and a cup of milk should make caramel, but it could be scary for people who havent done it before as it has to bubble and rise multiple times its' size and then settle down for 30 seconds to 10 minutes before you take it off.

@smoothieking157 If we're going to get picky about pronunciation, then "de" is most definitely not "da", it's said as a flattened "duh", or "der" without the rolled "r" sound at the end.

If you brush the top of the cookies with melted butter before you put the cinnamon on, the cinnamon will stick and the cookie will become a nice, golden-brown.

Bottled orange juice is not "fresh orange juice." Fresh orange juice is juice that you just squeezed from an orange. Juice in a bottle is pre-made and pre-packaged far in advance of when it finally gets into your refrigerator. That isn't fresh.
