If you are showing emotions, you are loosing control. Your team don’t want head chef who’s loosing control. Being calm and steady with emotions is really important to be in charge.
as someone who's never worked in a restaraunt but has a huge interest in food - this is 10/10 content for me. i could watch this for hours. big ups for being polite and chill and professional in a busy and stressy situation .

I think you are on the ground floor of a new movement where instead of TV shows filming service with high amounts of editing, the chefs themselves do it. It shows your integrity and passion for the food and more importantly, shows the respect you have for your staff as professionals. Especially showing how the head chefs lead from the front. You are in the weeds with everyone and still manage to mentor others and keep things on track. I live in the US but would immediately decide to visit after watching your gopro vids. Keep up the great work!
I love how most of the sounds in that kitchen have an almost ASMR quality to them, then there's the impact printer with that sound that cuts through the heart and soul.
As a chef myself in "The Road Hole Restaurant" in St Andrews I have to say I'm very impressed with how you run your team and kitchen. I also saw you on Sorted foods few month back good too see the kitchen at work. Keep it up man. Respect too all members lead by example I love it.!
You are the type of chef I’d love to work for. Calm and collected, stern when you need to be, and actually respectful to your cooks. That is how you get a team of people to love you and support you and stay with you throughout your career. I love how you compliment their work as well- sometimes hearing a good job and A “that’s cooked beautifully” etc will make or break my mental during a crazy service. This is lovely to watch.
I served 24 years in the Air Force. I love the way you run your kitchen. Reminds me of my military days. You're very organized and your whole team understands their roles and you can see the teamwork. Very cool 👍
I think when you get into a position with the best, you're expected to do your job and do it well under the umbrella of the platoon and Team. At least for me that was the case; the screaming and being treated like shit is for the proving ground, but once you actually need to do the job, hopefully there's no screaming. At least that's my impression (Former Navy)

I've heard that kitchens in London are the hardest for work . That everyone is shouting and that there is unkind violence in the kitchen. This is the complete opposite, beautiful to look at. I admire how everyone in the team is respected.
Try North America its a third of the staff and a usually a massive menu because people want to cater every whim instead of being known and good a something. USA also rush's dining so fast they expect anything in 15-20 minutes with god awful portioning and just food descriptions that don't match the techniques used. Its actually starting to kill the industry because its been a warm body system with a 13$ USD an hour wage when living wage is 24$ (In my city living wage is 24.50). The margins for food are maybe 7-9% profit and everybody complains about prices when they are engaged in a luxury (America has forgotten dining out is a luxury due to fast food)

I wish you would do more of these videos. I'm "retired" from the industry and had to transition to work from home after covid. I love to have these videos going on a side monitor, keeps me grounded so I can continue to stare at my computer screen all day. Eventually when I make it through London I'll be sure to stop by, but until then, keep up the stellar work, wanted to share my appreciation from the Birmingham across the pond.

As a line cook with over 20 years in the industry I have to say I love your attitude towards your crew..... I cannot stand when head chefs are just overly critical and demanding.... it's obvious your line respects you and I totally understand why!!!! Great job chef

I used to work in the restaurant and our head chef was just a d*ck. He was always mad about something and everything we did was just not good enough for him. But seeing a head chefs like you guys makes me wanna get back into gastronomy and work with food again. I could watch this whole day. You find everyone as a crucial member of the team and treat them with respect just like every head chef should do and because of that you got big respect from me ❤.

Most days it was 10 to 15 hour shifts -No breaks- No food- No drinks

Just started watching these live POV videos, absolutely great! I’m addicted already! Great idea, my dad has worked as a chef in restaurants all his life and I can now see why!! The teamwork is like no other job can compete to. Must be motivating to be around people who are good at communicating and work as a team. I’m currently stuck in a call centre job for a short while but I am honestly tempted to pursue a career change to working in a restaurant kitchen, looks a lot more fulfilling and must keep you active too! One other comment did mention this but if you are able to at some point for future video ideas, a POV of a service from the different stations and the pass would be pretty unique and interesting to watch! My diet is Halal but your food especially those burgers look damn good otherwise I’d come in to try it out!

I feel right at home while watching this, I used to expedite in a busy Italian restaurant for 6 years and sometimes I miss but other times I remember how stressful it can be.
This is why I don’t get snippy about waiting for food. Kitchens like this one work so hard. If I’m waiting an hour for food like this, that’s totally fine by me
Nice seeing such a good working atmosphere. I was working in a similar flow restaurant but less than half their staff size and its total chaos specially on weekends. And its 12 hour service so you can imagine.
I would be forever grateful if you found the time to explain how your ticketing system works, i can see diferent tickets go to diferent work stations in adition to the main ones with table numbers on them. Great videos!!! It is amazing to see the work being put together!!
