- This 2 part video documentary describes the steps and the work involved in producing premium Oregon pinot noir. The process of winemaking is followed from growing and harvesting the grapes, to fermenting and aging the wine.
It's amazing all the work that goes into getting a bottle of wine to your table.
The process and equipment here can't help but make a great wine. I picked up a few tips here , and a lot of knowledge. Many thanks for sharing.

They use RC-212, a Bourgovin yeast used for Burgundy
Do u add sugar to crushed grapes along with yeast to get desired alcohol percentage..??
Is the picking into buckets on the ground an issue? When we pick fruit by hand, we have to keep the containers off the soil, especially if they are then dumped into bigger containers. Soil is considered 'contaminated', particularly by things such as e.coli and so on. Are the harvesting crew instructed on handwashing?

At 7:07 he writes RC212. Thats a damn fine yeast strain by Lalvin and availible to home wine makers. Its the yeast I use for my Concord grape wine. You cant go wrong with this yeast if making a red

They are considered trade secrets by the vinyards. Often times they will kill of the natural yeast that is found on the grapes with either another yeast or with Sulfer Dioxide and use the yeast they want...from their labs...which they grow and harvest because they will yield more consistent results year after year after year. I imagine there is some good info if you google making wine at home. I am taking a class on Spirits, Beer and Wine and we are covering wine this month. Good luck to you! Cheers!

Yes, answer is right here. "Natural yeasts" are a gamble, because Brets will ruin all of the equipment AND the wine if introduced to the winery. Experienced winemakers enjoy the control of a specifically chosen yeast and the properties it can bring out in a certain wine.
