Unfortunately can only find rapid rise fleischmann’s yeast. I will order the instant yeast shown in video, but am wondering if you have tried the rapid rise in a pinch.

The yeast calc seems inconsistent. You said the ratio was .0031. This would be 3.1 grams for 1KG of flour. In your video, you added .31 grams to a 900KG of flour. Am I missing something?
Lets say I use Mortons Kosher salt, how would it still be 3% ?

Does anything change If I make a 20" pizza with your recipe?
A 20 inch will be much thinner if you stretch the same size dough ball.
@@DiffFamilyReviews I didn't think about that. I guess I have to figure out the right amount of dough. Thank you for your attention to detail in your videos. They do give me confidence to make good pizza at home.
@@lout3921 I’d probably bump it up to a 1000g dough ball if you like thicker crust or keep it at 800g for a little thinner crust on a 20 inch screen.

Excellent job , the dough recipe is very similar to the recipe we use in most New York , New Jersey , Connecticut , mom n pop shops most do use trumps , Pillsbury high potentate or balancer if you want to add a little more flavor to the dough try using fresh block yeast or an amazing aroma . When I bake pizza @ home I use two square Sicilian pans first form the pizza on a parchment paper slide onto the first pan place in oven with second pan as a cap half way through baking remove cap with strong tongs perfect every time even with a crappy old oven
