I remember Oumar, he was featured in one of munchies videos.
He is a hard working and adventurous man with talent.
Travel across the world honing his skills, sacrificed a lot for his dream, he is a great inspiration.
Everything he cooks looks delicious and I hope, since he is so wholesome, that sooner or later he gets some more media attention, what a contrast between him and some celebrity chefs!!

Yum! I love Senegalese cuisine! My sons cannot get enough of Lamb Dibi, Thieboudienne and Mafe.
I was born in Dakar, Senegal I left when I was 8 years old and to this day I remember eating Thieboudienne, and Mafe.

It's a Senegalese garb. It's usually made by measurements. Other West African and Central African countries also have these sorts of outfits that come with similar pants

There's so many parts of the world that surely have delicious foods, this is another that I don't think I've seen much about. Hopefully I get to travel some day, even if it's just to some city in the US that has a bunch of diverse chefs with food trucks or restaurants.
I have seen that New York is the epicenter of a great variety of cuisines and flavors.
Ok so this dish looks super delicious, I've never seen anyone marinate onions before which is cool, also the magnet spice containers on the fridge are awesome and I need those, definitely want to try some Dibi!

But it literally comes from Senegal-Gamabia it's in the name, Jollof rice as in the rice made by the Wolof people.

Tres bien mon frere! As an American, I work in Mali, a Senegal bordering country and I see this cuisine influence. Unlike the Malians, the Senegalese have mastered the pepper, thank you. I would add some tomato to the greens and kick this out on a baguette/sandwich option as well. Clever and brilliant recipe!
