Rick Makes Bacon Fat Tortillas | Bon Appétit
My abuelita made this nearly the same, with bacon fat from her yuban coffee jar, and with Manteca. He's right, you'll never find tortillas like that at the store.
Rick needs more episodes! His videos are great, we need him as popular as Brad and Claire!
That’s literally one of the most delicious things I’ve ever seen.
I thought the same. I would have ordered delivery ones right now except im certain it would be a disappointment
also *bows down* I now have an excuse to cook bacon AND use the rendered bacon fat now. You are awesome
I'm actually happy about all that bacon fat not going to waste! I legit just throw it in the trash when it firms up, now I have a reason to make more bacon!
You need an excuse to cook bacon? 😂
Right? I used to put it in a container and then dispose (cause I don't throw it down the sink.) Now I'll keep that lard in the fridge for recipes like these!
hahahah I just posted my video using bacon fat to cook popcorn instead of oil. It's so good and went really well with my "whiskey juice" lol 🥓🍿🥃 Maybe not the healthiest snack but very good for mental health, I would say lol 🤣
The amount of people actually annoyed at how he pronounces tortilla is actually concerning. It's not his fake accent, it's just how it's said in his mother tongue. Why do you want the word anglicized so bad when the origin isn't??
MTJ that just got dark...
Oringes*
I agree.

Muy bien escrito ❤
I need this guy's apron plug
YAAASS!! My grama makes her tortillas from home made pig lard because they raise pigs and OMG THEY ARE THE BEST EVER. She also sometimes leaves small pieces of meat in the lard that go into them
People grasp at literally anything to hate on BA videos, geez. A Hispanic guy pronounces Spanish words how they are meant to sound, that's just too much!
I love to hear people that didn't grow up here in the states or grew up with nonEnglish-speaking relatives pronounce words that originate from their country with the correct pronunciation.
I honestly don't mind that he does it. The fact that he doesn't do it all the time and really hits it hard when he does makes it a little grating though.
You either pronounce it in one language or the other (not half-way), and it's a constant struggle between wanting to keep stay in the language you're actually speaking and switching to the pronunciation that feels correct.
whoa tell us how to make that filling
It looks incredible!!
Hit "show more" under screen and select their link to their web page and the recipe is there.
Ineluctable Smith Thank you!
@@Forevertrue Bless your 💖, Ty
Love love love that apron!
He’s pronouncing “tortilla” right. That’s how we say it in the north or Mexico. Words ending with -illo, -illa, -ito, -ita can be pronounced without the double L or T. Tortilla=torti’a, chile pasilla= chile pasi’a.
In Spanish, all double L's are pronounced as a y sound.
Philip Fahy Yeah buts kinda like the difference between Wednesday and Wensday, nobody cares. In this care it's even more insignificant because the y sound isn't stressed all that often and is often not noticeable unless heavily enunciated. He says the y sound a little but it's not particularly different iya and ia sound very similar.
I thought this was a great, genuine video, it felt like he was sharing something from his childhood.
That looks awesome need more videos from this guy
I've made this recipe twice now. Added more Jalapeño the second time around but still absolutely delicious. I can't go back to store bought tortillas after I started making my own
They look incredible Rick! You also should do the fillings recipe.
I love this guy
Daddy sighting @ 2:18
thank you for giving us the info we really need
I wonder what hes making....
ParvulaUniversum I died
"It's Alive! with Brad - Brad makes a fermented stock pot."
These tacos are amazing. Just made both the filling (used tri tip instead of hanger steak) and the tortillas and this is definitely going to be something I make again
Looks perfect. I loved watching how he rolled them out! His hands look experienced
This guy is cool, stop hating fools
I feel like this needs to go be used for a meta-bacon taco. All the bacon, all the preparations, one taco.
Made these tortillas tonight for the family, they were awesome!
that apron and glasses combination is sick
The milk and high amount of fat content is exactly what I needed. My tortillas always ended up too stiff and tough, and wouldn't get that almost laminated-pastry-like tear. Guess I was just being too reserved and need to embrace abuelita levels of fat in my cooking.
Yes, if you want that elasticity, softness and those bubbles use fat.
Can we get a video on making that filling too? I'd love to make that at home!
I've been making tortillas with semolina flour, water, and a bit of salt. They're pretty good, but these look far superior. I gotta try this.
Most amazing apron!
Suggestion: Everytime you coock some bacon, KEEP THE FAT, put it in a glass or something, keep it cool, and use whatever you like
yup, that's what I always do, I just posted my video using bacon fat to cook popcorn instead of oil. It's so good and went really well with my "whiskey juice" lol 🥓🍿🥃 Maybe not the healthiest snack but very good for mental health, I would say lol 🤣
I recently started doing that again. When I was a kid (I'm in my 50s) my mom used to have a little ceramic crock next to the stove for the bacon fat. We used it all the time to cook things like eggs and potatoes. Funny though, we always just poured the fresh grease on top, Don't remember ever using it all up or cleaning it out. For all I knew the fat on the bottom could have been a decade old lol.
Great recipe! The tortillas are delicious!
I am trying these! Lived in southern Mexico for 16 years and miss good tortillas. 🇨🇦
Great video, will be using it with my culinary class this year!!
You can buy his apron print on Etsy and buy the pattern and make it yourself. The print is called Alexander Henry Super Lucha Libre
Thanks so much for this recipe. I have some fresh bacon fat in the frig. Making some this week!
i want that apron
I just made them. They were great!
I'm pretty sure I could smell those through my computer!
Looks great, gotta try em.
My son doesn't eat eggs, may try bacon, hash brown, and cheese breakfast tacos tomorrow.
Some egg and potatoes for the rest of the crew rolled in one of those awesome bacon tortillas!
Gracias Abuela!
You added the milk to the oil mixture and warmed it on the stove.... then added more milk? again after stirring the flour, baking soda in with oil - milk mixture?
1) I need this in my belly right now. 2) I need this apron! 3) Thanks, Rick!!!
everything about this looked top notch
Looks absolutely delicious. Will def try. Love the apron!
How much salt and baking powder did you put in the flower? Also how much cold milk was added? I heard 3/4 when you heated it.
Yr great I love yr recipe.. I never used milk before and now I will try it also what flour did you use for this recipe?
Thank you 😊
This looks amazing! My partner is from Texas and i will definitely be making this for dinner soon!
That apron is the absolute bomb digitty.
I just make them. So good!!! Thank you!
that filling he’s putting on the tortilla in chihuahua is called gringas abrasadas
They look lush! Would like to see the other recipe though.
The guy that does the audio mix always has the background music up too high. It is a constant problem with BA's videos. Are you trying to cover up the ambient noises of the test kitchen? Stop! It makes things much much worse. You've ruined a bunch of Claire's videos that way. Don't ruin Rick's as well
fitzgordo the bon appetit fandom is not playing around
Noticed this as well, really does take you out a of video.
Give them time. Go watch some old videos from a channel you enjoy -maybe two to three years ago- and see how their quality has improved. BA will get there as well. They should also just make a second channel dedicated to Brad.
fitzgordo I stopped watching because of the loud goddamn drumming! And his glasses.
Yes. Please stop compressing the audio dynamic range. It makes the video sound like a Justin Bieber song.
this looks dank as fuck gotdam
I am 100% making these tomorrow.
If you make these how long will they keep?
great video! they look easy and amazing!
Is there any reason to use vegetable oil and not more bacon fat? I was thinking of doing this recipe but with smoked beef tallow.
Making these this weekend. Also I love that lucha apron
Mexican version of Heston Blumenthal?
I saw this title and I laughed because using bacon fat is what I was taught. Milk kinda makes sense because for fry bread, I use dry milk.
I don’t know what on earth im doing wrong, first time, they were outstanding, 2nd and now 3rd time making them, and they’re just stiff and raw. I really have no idea what im doing wrong. They were absolutely perfect when i first made them.
What are the quantities please? Because I saw he puts milk + fat + another milk.
God that looks absolutely delightful!!
That Apron is AMAZING i sooooo need to get one OMG!!!!!!!!!!
I like Brads new glasses.
WHAT'S THE NAME OF THAT DISH FROM FRESA'S?? I NEVER NOTICED THAT IN THEIR MENU :O
Sonia Arumdati taco norteño
How much baking powder and how much salt
Guys everything I’ve seen says bacon grease will keep for a month. I don’t eat bacon every day because it isn’t healthy inside care what anyone says but once in a while I want to indulge so this recipe would be perfect. Trouble isn’t won’t have enough grease. May be I can fry up the bacon and dehydrate it to keep linger for sandwiches and then like?
Rick had me at bacon fat... and who doesn't love bacon. I'm his now.
Rick knows how to cook
thats some good looking bacon. takes me like 15 minutes to sort thru the bacons at the grocery for a good pack
looks great rick!!!!
YAS FRESA’S. Great vid!
I am in love
Sir, bacon is not a vehicle for flavour it is a Gift From God Almighty Himself and kindly never forget that!!!!!!!!
This guy is amazing. Where did that luche apron come from?
Best Apron ever! Also milk wtf? 💪🏻💪🏻💪🏻
fuck the bacon fat tortillas, give me the recipe for that filling. Holy shit that looks delicious
YUM‼️
what kind of Brad is this?
the wrong one
A gay Mexican one with an awesome apron.
This place is good af
How much salt and how much baking powder?
OMG Fresa's is the best. This was my favorite place to eat at while lived in Austin.
Can I substitute whole wheat flour for the flour used here? Same measurements?
Good Night... I would eat that!
Gurl awesome apron
How much baking powder and salt did he use
No clue. 2 years after you asked we still dont know
I am going to guess and say 1 tsp baking powder and 1 tsp salt
How is everyone in the kitchen not right there begging for food!?! That's where I would be!
can someone tell me if the milk makes it softer as opposed to water? thanks
good thing I only use store bought tortillas to make Nutella rolls
No ingredient list?
I want his apron! But yes, this is very similar to how my abuelita makes tortillas & there is DEFINITELY nothing like tortillas hechas a mano (made by hand aka homemade)!!
Ayyyye 🙂 I live in Austin
2:42 Ohhhhhhhhh but when he said tortilla that time it sounded completely normal tho
Can someone please tell me where I can buy that badass apron?
Holy crap - wow
How much salt and baking powder?
Ive been using a little over 1 teaspoon salt and baking powder and they come out fine
Is the recipe actually posted anywhere? There's some stuff that is not making much sense unless I completely missed something.
dacs67
If you actually mention what you're not understanding, maybe other people in the comments could help.
dacs67
If it's the second addition of milk, he saved half of the milk(didn't warm it) for adding later at 1:18
How much baking powder and salt in this recipe? Also I thought he mixed the milk with bacon fat...he added both into the flour/baking powder mixture....I thought they were already mixed?
does anyone know the brand of glasses he is wearing?
TEJAS!!!
How do you store the flour dough? Are they safe in the freezer?
yes, freeze good.

I don't know who to believe. Rick says 2 tablespoons of Vegetable Oil but the recipe on the Bon Appetite website says 1/2 teaspoon.I'm just going to trust in Rick...
Its 2 tbsp. Oil
Is there a reason to use vegetable oil instead of butter?
