    Mandy, pop your jar of sundried tomatoes (with the oil) into the food processor and blend to a paste. Easy peasy!

      What a great idea. I bet any extra could be frozen in an ice cube tray. I used to freeze pureed vegetables that way. Then I put the cubes in a ziplock bag in the freezer, and take one or two out at a time, for the baby.
      Of course, they could also be added to soups.

    you can bake meatballs in the oven at 350 degrees for 30 minutes, They come out nice and brown and juicy

    If you'll put your onion in the freezer for 20-30 minutes before you slice/chop it, there'll be no tears ❤

      I put mine in the freezer. Also if you put a wet paper towel by the onion as you are cutting it helps with the burning of your eyes.

      I immediately put my chopped onions (if they are overly potent) into ice water. All it takes is a moment to calm them down...the afterburner, anyway

      Depends on the Onion Type, it's NOT the smell that makes our eyes water, it's fumes that trigger our eyes to fight off the fumes... a small fan blowing across the chopping area keeps your eyes free from the acid fumes.

    Ms. Mandy- I grew up in Louisiana and one of the distinct pleasures of my life was meeting Mr. Tony who used to sell his Creole seasoning out of the back of his car in baggies because ziploc's hadn't even been invented yet. At the time he was the national award-winning insurance salesman for whatever insurance he sold I can't remember the company but he was one of the nicest kindest people I've ever met a cajun threw and threw funny as allget out I have all of his cookbooks. Phonetic pronunciation of his last name- Sah sh ree. The SH sound is like you're about to say the word should Only just make the Sh sound. C'est si bon!

    LOL Mandy you need to buy small size disposable powdered vinyl gloves. I love mine - I buy from Walgreens but I' sure they sell on Amazon. I never let myself run out. Use them in the kitchen, bathroom, laundry room and when planting outside. Love you and thank you for all your dinners!

      Make sure they're nitrile and you won't have to deal with a latex allergy one day. Trust me, it's not fun.

    A trick to slicing onions into rings is to stab a fork into the root end of the onion to hold it. No fingers in the way and no wobble.

      I’m one of the ones who suggested you try Dukes in the mashed potatoes. I’m 84 yrs and my mom did it and of course I’ve always done it.
      When ever you use Dukes no matter what it will be good. Love Dukes.

    I use The Tony Chachere's on steaks I grill, on shrimp I broil or grill, on pork chops... It is an essential ingredient for my fried turkeys... great on all types of meats plus I sprinkle it on my popcorn...

    UPDATE!! I had my doctors appointment yesterday about the migraines. I have another sinus infection. I have a CT scan on the 27th of this month and to see a neurologist. I'm nervous about the CT scan. I ask y'all to please continue to pray for me. Thank you in advance. God Bless.

    Tell Steven to "wash," the motions of scrubbing/washing, his hands with oil, use olive or veg oil, after handling/chopping hot peppers. It will cut the capsaicin so that it won't burn. I haven't tried putting a finger in my eye to test it, but it didn't burn to put finger on my lip to test. Learned that somewhere years ago. Messy, but definitely helps shorten the time it can be dangerous. Just soap and water won't cut it.

    I saw someone take all those potato peelings (from wshed potatoes), dry them well, then oil and salt them and air fry them until crispy! what a great crispy snack!!

    I add 1/4 cup of Dukes AND 1/4 cup of daisy to my mashed potatoes. Best of both worlds!

    I'm adding both recipes to my must-have list. Just as soon as I'm able to swallow again, I have a whole lot of your recipes I want to try. I had mouth cancer, and radiation did a job on me. Watching you and your family has helped me get through this. I love cooking and can't wait to get back in the kitchen. Give Gracie some chin skritches from my babies, Goblin and Pixie.😊

      @MandyintheMaking Thank you. Mine started when I bit my tongue. It didn't heal . By the time I got someone to listen to me, it was months later. I lost 60% of my tongue. I now have a feeding tube. I would like other people to know they have to advocate for themselves. If no one listens to you, don't give up or think they know best because they have a medical degree. I will now get off my soap box. 🙄

      Prayers, I completely feel your pain...I'm 22 years out from tongue cancer. Lost half my tongue and then after radiation, lost teeth, and then several years later had to have jaw replacement (again due to radiation). I'm very blessed to still be here, but life is forever different. Don't ever give up!

    Would like to ask for prayers my daughter was diagnosed with MS and will have to start infusions soon as everything goes through ins.shes just 43 2 children.also for me my heart is breaking as a momma not being able to fix this for her.God Bless ❤️

      Oh Susan, I'm so sorry. Will pray for her. Here's some encouragement for you: my best friend, Shellie, has had MS for 17 years and 43 now. She's still able to work and have a mostly normal life! The medicines they have nowadays for it are really wonderful! Sending big hugs 🤗

    Perfect mashed potatoes, peeled boiled potatoes mashed with S & P , butter and canned evaporated milk .... no need for heavy cream and sour cream or mayo.

    I used to make tons of cheeseballs at Kroger with oversized gloves. Put rubberbands or hairbands over the gloves at your wrists to keep them from sliding off.

    My 16 year old daughter has little hands and we use those gloves, they are huge on her. I will either tie the cuff at the wrist or she will put a rubber band around the cuff on her wrist. It helps a lot. I always take the stems off the spinach, too. Have a wonderful weekend!

    Hey Mandy, I'm definitely gonna do the Meatballs but I'm not a spicy girl so I think I'll sub Lemon Pepper for the Orzo. Also, my Mom did a kinda Country Potato with chunky mashed reds, butter, garlic powder, & (brace urself) COTTAGE CHEESE, & Shredded Cheddar. They are to die for & whenever they go to a potluck, theyre wiped out in record time. She just threw it in on a whim one day & it was a happy accident! Hope u try it sometime. ❤
    PS: Gracie called & she is not happy, she's thinking she needs to start a union! "Cheese or bust" is what she's gonna call it. 🤭❤️

    Hey y'all 🤗 just a couple of tips --- I use a cookie scoop when making meatballs, you'll have same size meatballs to insure even cooking. When I peel potatoes I put down paper towels so it'll catch the peel and then I just have to fold up the towels and go straight into the trash. Easy clean up. Those meatballs look delicious.     Mandy, love your show and our dog (a goldendoodle) loves Gracie! Every time he sees her he runs to the tv. Watching this show my daughter said, “Mandy, air fryer!” She makes large meatballs, ice cream scoop size, she cooks them in the air fryer at 375 for 8 minutes. She shakes them half way through to double check them and they are AMAZING! She adds in minced garlic, diced red or regular onions shredded carrots, spinach, dash or 2 of Worcestershire sauce and a bit of Parmesan cheese in addition to your favorite binder and egg and seasoning. So they are denser than most. Good on their own or with your favorite sauce. They also make great sandwiches when sliced.

    To this day, I sneak in about the same amt into mashed potato... but use Dean's French Onion Dip. Adds the slightest hint of that familiar taste. Everyone always asks, no one knows. :)

    As a kid growing up my nanny always made her mashed potatoes with dukes Mayo, whole milk, salt , and pepper. It’s amazing and I make it the same way my kids love it ❤.

    While I have thought about using mayo in mashed potatoes, as well as ranch powder (my wife loves ranch, I don't), the one thing that I have that makes mashed potatoes even better.... is a ricer. No lump mashed potatoes every time. To put a finer point on this, I have a box of instant mashed potatoes in my pantry, unopened. I'll open it if I screw up on mashed potatoes. It's been there for about 3 years. I might need to replace it. Anyway, a ricer. Makes the potatoes into about the size of a grain of rice, easy to mix butter and cream into (and mayo, or ranch powder, or bacon bits and green onions)

    I recently joined Thrive Market because you spoke so highly of it. I've already received my first order and everything was great. I have another order coming on or around the 15th of next month. I can't wait to try some of the snacks I added to my order, they look yummy. I had a below the knee amputation 10 months ago and I'm still learning how to walk again, so online shopping is a lot better than carting a wheelchair or a walker everywhere and having to make sure no one accidentally bumps/runs into me since my balance is still a little off.
    I remove the stems from baby spinach too and my son keeps telling me you can eat those mom, so I tell him I don't like them and if I wanted to eat a leaf, I would have someone go grab me a handful off the tree outside my window

    I flatten the meatballs a bit. They are a bit more oval. They brown more easily, and flip easier. Looks so good

    Mayonnaise is my go to in mashed potatoes. It is the only way to go if you are going to freeze them. I roll leftovers into balls and freeze them. That way, I can pull out just one or two when I need them.

    I’ve got the same gloves for when I’m mixing meat. Just a little hint, I use a rubber band on the top of them around my wrist to hold them on my hands. Works great! Love your videos!

    I haven’t found the Aldi sun dried tomato pesto recently either, but I know Classico makes some that I’ve seen in Publix.

    I also heard if you take some paper towel, get it wet and squeeze out the water and then just lay it in front of you and it is supposed to help.

    Yep! I've been making mash potatoes with mayo for years. It was how my grandmother made it. All the recipes looked delish.

      I also remember my next door neighbor putting in a TBSP of Mayo when making her cornbread. Kept it nice and moist. Just saying!!

    Hay Mandy I always cook 2 turnips with the mashed potatoes and add butter and cream. The turnips give it a great flavor.

    A little trick to help your meatballs stay together is to saute your onions and let them cool completely before adding to the meat mixture. Just soften them up a bit so they aren't tearing your meatballs apart in the pan.

    Put some garlic in the potatoes while cooking and mash it with potatoes. My daughter adds sour cream. L9ve ya'll

    Tip: when you are making mashed potatoes or really any boiled potato, Boil them in chicken stock.

    Mayo in the Mashed just makes sense. It's just oil and eggs and a little seasoning. Probably delish!!!!

    add about a full tablespoon of mayo. I never knew there was any other way to make them. Dukes makes anything better.

    Cream cheese is also great in mash potato’s. The flavored cream cheese spreads are a great flavor enhancers. Not a lot a heaping spoon full or two is all it takes.
