1. Just keep the micro usb end
2. Cut the large USB end off and connect to audio jack.
3. no need for white cable. Save a lot of unnecessary soldering work.

How would that cable provide stereo sound when there are only 2 wires being used, and you need at least 3 (left channel, right channel and ground)?

Ofcourse it doesn't work. You would still need a DAC ( digital to audio converter).

Not quite. Micro USB can have analog audio, hence no need for DAC. eg Sony WI-1000X has no DAC on its audio cable.
