High Protein Creamy Feta Soup Recipe I Part 2: Easy Weeknight Dinners

  • Welcome to Part 1 of my NEW UA-cam Series: Easy Weeknight Dinner Recipes 🌿👩🏼‍🌾 Today, we're making a (High Protein) Creamy Feta Soup with roasted veggies for a rich, satisfying, and nutrient-dense weeknight dinner!
    RECIPE:
    - 3 tbsp. Olive Oil
    - 1 8oz block of Feta
    - 2 Bell Peppers, chopped
    - 2 large Tomatoes, chopped
    - 1 Sweet Onion, chopped
    - 1 head of Garlic, top sliced off to reveal cloves inside
    - (Optional) 1/2 cup Fresh Herbs, such as basil, oregano, and thyme
    - 4 cups Bone Broth
    - 1 Baguette, for serving
    - Salt & Black Pepper, to taste
    1. Preheat oven to roast 425F. Line a large baking pan with parchment paper.
    2. Add all the chopped vegetables to the prepared pan, drizzle generously in the olive oil. Season with salt and black pepper.
    3. Roast for 30-40 minutes, until vegetables are fork tender and feta is golden.
    4. Transfer all the veggies and feta to a high speed blender with 2 cups bone broth. Blend until smooth.
    5. Pour the soup into a large pot over medium heat with the remaining broth. Heat up until desired preference.
    6. Enjoy warm with a baguette (toasted or plain)!
