The BEST SIMPLE meal and some disappointing news

- Quiche (1 casserole dish) -
8 eggs
1 cup milk (of your choice)
1 cup mayonnaise
Frozen spinach or other greens ( I use 24 oz)
2 cups grated cheese (of your choice)
1 tsp salt
Some pepper
Whisk together eggs, milk, and mayo. Add in the rest of the ingredients and bake covered at 400 degrees for 50 minutes… then uncovered for another 10 minutes.
Chicken Sheet Pan Quesadilla -
Servings: 12
Ingredients:
- 3 Tablespoons of salted butter, melted
- 8 burrito-size flour tortillas
- 4 cups shredded Cheddar Cheese
- 4 cups shredded rotisserie chicken
- 1 teaspoon taco seasoning
- One 4-ounce can diced green chiles, drained
- 1 cup frozen corn, thawed
- ½ cups salsa
To top with (optional): 1 avocado, diced, sour cream, 1 lime, cut into eighths and several sprigs of fresh cilantro.
Instructions:
Preheat the oven to 450 degrees F. Brush a half sheet pan or rimmed cookie sheet with half of the butter.
Arrange 2 tortillas along the longest side of the sheet pan with half hanging over the rim; repeat with the other long side of the pan. Place one tortilla, also half hanging over, at each end. Place 1 tortilla in the center so the whole bottom of the sheet pan is covered.
Sprinkle evenly with half of the shredded cheese, all of the chicken, taco seasoning, chiles, and corn. Place spoonfuls of the salsa over the top and spread evenly. Top with the remaining cheese.
Place 1 tortilla in the center of the pan, on top of the filling, and then fold up the overhanging tortillas so that the filling is completely covered. Brush with the remaining butter, top with another sheet pan and press down firmly.
Bake until the tortillas are crispy and the inside is melted and hot, 20 to 25 minutes.
Carefully remove the top sheet pan. Slice the quesadilla into squares with a pizza cutter and serve with avocado, sour cream, lime and cilantro.

I never, ever use my oven unless it’s between midnight and 8 am in the summer!🥵 Peace is crawling and I’m sure you have had to pick everything off the floor - my kids were notorious for finding the smallest speck and putting it in their mouth. Detasseling corn 45 +years ago had only arm strength and machetes... no machines! Love making quiche in 9×13 pans. I'll make it with or without crust and sometimes with hashbrowns. ❤

I have found that if you get cheese stuck in the cylinder, just rotate the handle in the opposite direction and will loosen it up. Saw it on someone else's channel and found that it worked. Love your recipes. Blessings

My thought when watching your RV trip to the lake in 100° was...don't go camping in the middle of summer . Plan for late summer/early fall or late spring/early summer. You have a swimming pool and AC at home for 100° 😂

I love mine. I only buy block cheese now shred all at once store in the freezer in little bags. I have all the cheese done at once for the month. I love it. Plus my granddaughter loves to use it also when she is here. She does about a half a block and she is tired lol.

I love my cheese grater, too!!! One trick I had so the cheese doesn't stick is to spray a little avocado oil on the metal barrel and the cheese comes out effortlessly. Love your family!

So awesome to have drivers in the house! My daughter just finished drivers Ed, about 35 more hours and she'll be able to get her license, and we'll have a house full of drivers.
May I suggest using a layer of refried beans as the first layer of the sheet pan quesadilla. It acts as a layer of “glue” that will prevent the flour tortillas from sliding around. Plus it adds a great taste!

We have done that quesadilla for a while. Our favorite is scrambled eggs, sautee mushrooms-onion-asparagus, salsa, green chilies, and cheese and then serve with fresh fruit. And we have done this breakfast for dinner many times. When I food prep for the week, I pre-scramble the eggs in the microwave so they are extra fluffy and can handle being refrigerated without turning hard. If you have the time, you can just mix your eggs and put them in the sheet pan and cook them for about 15 minutes and then use it that way but that just adds extra time.
I am a small family of 2 adults and 1 child, however I enjoy your channel a lot and frugalfitmom is also good for saving money on food, meal challenges, and helpful tips.

I bought a cheese making kit and am excited to try it(also a bit nervous) and my grandma brought me her bread maker and I just made cinnamon raisin bread and it turned out good. Most people I know in my area that do more home making stuff or homesteading are all in there 40s/50s so no one my age does it right now but I love it. I have found a few channels that have helped me a lot and inspired me and yours is one so thank you

I detasseled corn every year from age 13 to 17 in Illinois. We rode on a machine that had baskets that 2 people would stand in and we'd pull the tassel out of the top of the corn stalk. It was a great summer job.

I have this one too. You can grate nuts, zucchini, slice/shred potatoes, slice raw cukes for pickle slices- sweet or dill. Grate cukes for relish, slice beets, slice radishes, grate, shred celery , carrots for salads

Just leave out the meat on the quiche and it is great. Also I can imagine the Quesadilla would be great with beans and rice and veggies too.

That quesadilla meal looked good. I love chicken quesadillas, hubby hates them. I bet I could use one of my single serve dishes and make chicken for me and hamburger for him. Extra roast beef or canned beef with mozzarella would be good too. Gonna try this tomorrow for dinner! Yum!
