Easy Holiday Baking! Pistachio Pudding Cookies!!

- Hello again everyone! I've been struggling to get some holiday treats made up this year, I've made the same thing for years sadly. So, this year I decided to try something new. I found these a while ago on my Facebook and am so glad I saved this recipe. They aren't too sweet and a nice chewy texture. These cookies also taste better after a couple days so they are perfect to make up ahead of time!!
Pistachio Pudding Cookies
Ingredients
1 Cup Unsalted Butter
1 Cup Sugar
1 pkg Pistachio Pudding Mix(I used a small box)
2 Large Eggs
2 1/2 Cups Flour
1 tsp Baking Soda
1 Cup chopped Pistachios
Instructions
Preheat oven to 350 degrees F. Cream Butter and sugar until fluffy. Add pudding mix and eggs. Mix flour and baking soda, add to creamed mixture. Stir in chopped pistachios. This was a very dense dough for me so it was easier to mix by hand.
Form in to balls and place on baking sheets.
Bake for 10-12 minutes until edges are golden. Let cool slightly and remove from cooking sheet to finish cooling. Makes about 36 cookies depending on the size you like.

Those look really good. I'm a real cookie lover. I think pudding helps keep them softer.
