Thanks Matt, I did 2 TLs on my Traeger 885 for a house full yesterday (Christmas day). I reversed seared after lowering the grill grate and it worked perfect. The Horseradish dip was the kicker. Everyone was blown away! So delicious!

Good Lord! I've seen this done before, but never done one myself. I personally Would probably just remove the silver skin. Looks spectacular. Mouth is watering. Ace is the best place I've found as a supplier.

I find this amazing, just the opposite of me. Arriving Dec 23 again this year. If folks only knew how simple and just tried.
Another great video Matt. I would love to see more of trimming that beef tenderloin. I trimmed one once and made filets and they were the most tender I’ve ever had. I wasn’t sure about uses for the chain, etc

I followed this recipe for Christmas and very happy with the result (as you would say "I ain't mad it"). I ordered some of your rubs and looking forward to tasting those when they arrive. Quick question, do you have a normal 'rule' you follow when salting/peppering your BBQ? I try to keep it simple (S+P) but feel most of the time I 'wished' I put more Pepper on or Salt. Do you have a rule of thumb you use when applying S + P? Thanks and hope you enjoy your holiday.

Here is my perspective. I use my own money to create free how to videos. I'm over the commenters who gripe about gloves (on a set). No chefs wear gloves. People feel like they can say whatever they want online these days.
